🥔 The Sides Steal the Show
At Christmas, nobody remembers the details of the turkey, but everybody talks about the mashed potatoes. That’s just how it is. The gratin bubbling in its dish, the glazed carrots that vanish first, the things we keep refilling while saying “just a little.”
I took the old list and grew it: nine of the original twelve (the other three felt too summery or too Tex-Mex) plus sixteen new ones. Potatoes in every form, gratins, squash, a bread and a sauce to tie it all together. You don’t have to make everything. Three or four, done well, make a table.
