The Welsh, the simplest recipe in the world, but SO delicious and decadent! This dish comes from the north of France, in the area of Lille. A delight that I was able to taste during my recent trip to this beautiful corner of paradise!

Ingredients
- 4 large slices of bread from a Belgian loaf
- 8 slices Black Forest ham
- 280 g Balderson extra-sharp cheddar cheese, grated
- 200 g Canotier de l’Isle cheese with the rind, grated
- 3/4 cup Belgian blond beer
- 2 tablespoons grain mustard
- Salt and pepper from the mill
Preparation
- Preheat oven to BROIL.
- In the oven or in the toaster, toast the slices of bread on each side. Place in a large baking dish with high sides, put 2 slices of ham per bread and set aside.
- In a nonstick saucepan over medium heat, add the cheese, beer and mustard then season with salt and pepper. Cook for 5 to 7 minutes, stirring, until the cheese is melted. The mixture will be a little liquid and that’s perfect! Pour the mixture over the slices of bread.
- Place in the oven, cook for 2 to 3 minutes or until the cheese is golden brown on top!
