This poached salmon in white wine will make a perfect weeknight dinner because it’s quick to prepare, but will also live up to a luxury Saturday night meal. To accompany this dish, I suggest Château Ste-Michelle Chardonnay, a fantastic white wine under the $ 20 mark that will offer hints of red apple and pear.

  • 700 g salmon fillet with the skin on
  • 2 cups semi-dry white wine
  • 1 cup water
  • 6 sprigs fresh thyme
  • 1 French shallot, thinly sliced
  • Zest of 1/2 lemon
  • 1 lemon, sliced
  • Salt and pepper from the mill

Preparation

  • Preheat the oven to 400 °F.
  • In a baking dish, place the fish fillets followed by the rest of the ingredients. Season generously with salt and pepper then mix.
  • Place in the oven and bake for 25 to 30 minutes or until the salmon is cooked through. Baste the fish from time to time. Garnish with fleur de sel when serving!
