🔥 Big jerk flavor, no barbecue required
These jerk chicken drumsticks deliver bold, warm spices with just the right amount of heat, all made effortlessly in the air fryer. The skin turns beautifully golden, the meat stays juicy, and the spice blend clings to every bite. It’s intense, aromatic and incredibly satisfying, without firing up the grill or heating the whole kitchen.
🍗 Spicy, juicy and perfectly balanced
This jerk spice mix does all the heavy lifting. Thyme, clove, nutmeg, cinnamon, cayenne and brown sugar come together to create a deep, layered flavor that’s spicy but never overwhelming. After a short rest, the chicken absorbs everything, then caramelizes during cooking for drumsticks that are flavorful right down to the bone.
🔄 Air fryer, oven or grill, your choice
This recipe is designed for the air fryer, but it works just as well in a regular oven when cooking for a crowd, or on the barbecue when the weather allows. No matter the method, the result stays the same: bold, hands-on, party-ready chicken.
🍽️ How to serve them at their best
Serve these drumsticks with plain rice, a fresh salad or a crunchy coleslaw to balance the heat. Add a cold drink, place the platter in the center of the table and forget the cutlery. These are meant to be eaten with your hands.

✅ Rest matters
Letting the chicken rest allows the spices to fully penetrate the meat.
✅ Don’t overcrowd
Cook in batches if needed for better browning and crispier skin.
✅ Adjust the heat
Reduce the cayenne for a milder version.
✅ Hands-on eating
Have napkins ready, these are meant to be messy.

Rice, salad or coleslaw help balance the spice.

Preparation
- Combine all the ingredients except the chicken drumsticks in a bowl and mix well.
- Place the drumsticks in a large airtight container and coat them evenly on all sides with the spice mixture. Refrigerate for 1 hour.
- Preheat the air fryer to 375 °F (190 °C).
- Arrange the drumsticks in the air fryer basket in a single layer, without overlapping. Cook for 18 to 22 minutes, turning halfway through, until the chicken is fully cooked and the meat pulls easily from the bone. Serve immediately.
The chicken can be seasoned up to 24 hours in advance and kept refrigerated before cooking.
Chicken thighs work very well with the same spice mix and similar cooking times.
The air fryer produces nicely browned, flavorful skin, especially when the drumsticks are spaced properly.
This jerk seasoning works beautifully with chicken wings, pork, shrimp or even ribs, adjusting the cooking time to the protein used.
