The result: even crispier than the oven, in half the time.

Turning at 12 to 15 minutes lets both sides develop equal colour. Use this moment to check the cook: if things are starting to burn, lower the oven slightly and cover loosely with foil for the last 5 minutes.

- Spread the sweet potato chunks on the baking sheet and drizzle generously with olive oil. Add the brown sugar, Italian seasoning and cinnamon. Season generously with salt and pepper, then toss well to coat evenly.
- Roast for 25 to 30 minutes, turning halfway through, until the sweet potatoes are tender and deeply golden.

- Preheat the air fryer to 400°F (200°C) for 3 minutes.
- In a bowl, toss the sweet potato chunks with olive oil, brown sugar, Italian seasoning and cinnamon. Season generously with salt and pepper.
- Arrange in a single layer in the air fryer basket without overcrowding. Cook in two batches if needed. Cook for 12 to 15 minutes, shaking the basket halfway through, until tender and golden.
- Serve immediately!
They’re best straight out of the oven or air fryer, but can be made up to 2 hours ahead and reheated at 400°F (200°C) in the air fryer for 4 to 5 minutes to bring back their crispiness. In the oven, 425°F (220°C) for 8 to 10 minutes on an uncovered baking sheet. Never cover them when reheating. Trapped steam softens the caramelized crust.
