🔥 My homemade classic smoky BBQ sauce that beats everything
This recipe is my signature sauce that I created to accompany my bbq ribs, but it’s so good that I absolutely had to dedicate its own recipe to it. It’s the classic American angle, no apologies: ketchup, apple cider vinegar, molasses, honey, smoked paprika, liquid smoke and unsalted butter as a finishing touch for shine. The result? A perfectly balanced sweet-tangy-smoky homemade BBQ sauce that transforms any grilled meat into an American smokehouse feast.
💨 Liquid smoke, my signature secret without a smoker
The game-changer in this sauce is the liquid smoke, ½ tsp is enough. That’s what brings the authentic smoker profile without needing a real smoker. Combined with smoked paprika, molasses and Worcestershire sauce, it gives a depth of flavor that no commercial BBQ sauce can reproduce. It’s an ultra-quick homemade BBQ sauce recipe to prepare: everything in the pot, bring to boil, simmer on low heat 15 minutes, and it’s ready. The unsalted butter finish off the heat binds the sauce, gives it its signature shine and amplifies the richness in the mouth.
🍖 The chameleon sauce that goes with everything (or almost)
This sauce is good with everything, everything, everything. Obviously essential on my ribs, but also on grilled pork chops on the BBQ, juicy chicken breasts, a big beef tomahawk, grilled vegetables on the grill, burgers, skewers, pulled pork, BBQ sandwiches or simply as a dip with homemade fries. Not in your morning cereal though. Although I admit, I’m curious to try. It keeps 2 to 3 weeks in the fridge and freezes perfectly up to 6 months without texture loss. 💨 Liquid smoke: ½ tsp is enough
It’s my secret to bring authentic smoker profile without needing a real smoker. ½ tsp is the perfect balance. Enough to taste, not too much to dominate. Go easy: you can always add more but you can’t remove it once it’s in the sauce.
🧈 Unsalted butter finish, off the heat
The step that elevates the sauce from ordinary to signature: add the unsalted butter after removing the saucepan from heat, and stir until completely melted. The butter binds all ingredients, gives the characteristic shine of chef sauces, and amplifies richness in mouth. Never skip this step.
🌡️ Gentle simmering 15 min, no more
Really simmer on low heat for 15 minutes. Small bubbles only, no big bubbling. Too high or too long and the sauce becomes pasty and loses its balance. You’re looking for a consistency that coats a spoon but still flows slightly.
💧 Too thick? Thin with a splash of water
If during simmering your sauce becomes too thick for your liking, don’t hesitate to add 1-2 tbsp water to thin it. When cooling it will thicken a bit more, so better slightly too liquid than slightly too thick.
🌶️ Bonus spicy version
For spice lovers, add ½ tsp cayenne pepper or chipotle powder to the sauce. The heat balances the sweet and amplifies the authentic barbecue side Memphis-Texas style.

❄️ Storage 2-3 weeks in fridge, 6 months in freezer
In an airtight jar in the fridge, my BBQ sauce keeps 2 to 3 weeks without problem. It also freezes perfectly up to 6 months. The ketchup-vinegar-sugars base preserves texture intact when thawed. Thaw in fridge overnight and whisk briefly before use.
🥄 How to adjust according to your taste
This sauce is easily modifiable. Sweeter? Add 1 tbsp brown sugar. More tangy? 1 tbsp apple cider vinegar. Smokier? An additional pinch of smoked paprika (not the liquid smoke). Saltier? A pinch of salt. It’s a base to adapt to your personal preferences.

This sauce is ultra versatile. It goes with everything. - 1 cup (250 ml) ketchup
- ¼ cup (60 ml) apple cider vinegar
- ¼ cup (60 ml) brown sugar
- ¼ cup (60 ml) white sugar
- 2 tbsp (30 ml) molasses
- 2 tbsp (30 ml) honey
- ¼ cup (60 ml) water
- 1 tbsp (15 ml) Worcestershire sauce
- 2 tsp (10 ml) smoked paprika
- 2 tsp (10 ml) yellow mustard
- 1 tsp (5 ml) garlic powder
- 1 tsp (5 ml) onion powder
- ½ tsp (2.5 ml) chili powder
- ½ tsp (2.5 ml) ground black pepper
- ½ tsp (2.5 ml) liquid smoke
- ¼ tsp (1 ml) salt
- 1 tbsp (15 ml) unsalted butter

Preparation
- In a medium saucepan, combine all ingredients EXCEPT the unsalted butter.
- Bring to boil over medium-high heat while stirring to dissolve the sugars well, then reduce to low heat.
- Let simmer gently for 15 minutes, stirring occasionally, until the sauce thickens slightly and releases a pronounced smoky aroma. If it becomes too thick, thin with 1-2 tbsp additional water.
- Remove the saucepan from heat and incorporate the unsalted butter. Stir until the butter is completely melted and the sauce is smooth, shiny and homogeneous.
- Let cool to room temperature before transferring to an airtight jar for refrigerator storage, or use immediately to baste grilled meats.
