🍹 The ultimate Mexican cocktail

The margarita is THE iconic Mexican cocktail, born in the 1930s, 1940s somewhere between Baja California and Acapulco, and now the most-served cocktail in North America. Three main ingredients, a salted rim, a lime wheel, and you’ve got a classic that never disappoints. You don’t need to be a bartender to nail it: a shaker, a glass, some ice and 5 minutes flat.

🌿 The real original recipe

The original margarita is built on a perfect balance between herbaceous blanco tequila, fresh-squeezed tart lime juice, round orange liqueur and agave syrup that softens without masking. No powder, no premade mix, no bottled juice. Just fresh ingredients and the right ratios. That’s what separates a margarita that tastes authentically Mexican from an airport margarita.

🧂 The salted rim makes all the difference

A margarita without salt is like a car without tires. The kosher salt on the rim balances the acidity of the lime, highlights the roundness of the tequila and creates that saline contrast that defines the cocktail’s signature. Moisten the rim with a lime wedge, dip it in coarse salt, fill your glass with ice and you get that first sip that teleports you straight to a waterfront patio.

🔥 Tips and tricks for a perfect classic margarita like at the bar

🧂 The kosher salt rim, non-negotiable

The coarse grain of kosher salt clings to the moistened glass and delivers that saline contrast that balances the acidity of the cocktail. Avoid fine table salt. It dissolves instantly and disappears at the first contact with the lime. If you don’t have kosher salt, coarse flaky sea salt works perfectly.

🍋 Fresh-squeezed lime, never bottled

Bottled lime juice loses all the freshness, bright acidity and zest oils that give the margarita its aromatic signature. One medium lime yields about 1 oz (30 ml) of juice, just enough for one cocktail. Roll the lime on the counter while pressing with your palm before cutting it. You’ll double the amount of juice you get.

📏 Measuring precisely is the key to the classic

The balance of a classic margarita relies on exact proportions: 2 oz of tequila, 1 oz of lime juice, ½ oz of orange liqueur and ½ oz of agave syrup. Cocktail jigger, measuring spoons, a graduated cup. Whatever the tool, as long as you measure accurately. Eyeballing it will get you a cocktail that’s too sour or too boozy every single time.

🧊 Frozen blender version

For a frozen summer patio version, blend all the ingredients with 1 cup of ice at full power until you get a smooth, snowy texture. Pour directly into the prepared salted-rim glass. The consistency is like a firm granita you can almost eat with a spoon.

🥃 Margarita glass or rocks glass

The classic wide-rimmed margarita glass lets the cocktail breathe and puts the salted rim right at your lips on the first sip. The shorter rocks glass, more modern, keeps the drink cold longer when served on the rocks. Both work. It’s just a matter of style.

🍊 Quality orange liqueur

Cointreau and Grand Marnier give the roundest, most refined versions. Classic triple sec also works and costs less while still delivering a nice orange profile. Avoid cheap, overly sweet orange liqueurs that overpower the tequila.

🌿 Agave syrup, the original version

Agave syrup integrates perfectly with tequila since it comes from the same plant. It keeps the cocktail true to its Mexican DNA and brings a round sweetness that balances the lime’s acidity without masking the tequila. No need to substitute simple syrup or honey. Agave syrup is the right answer.

Frequently asked questions

A 100% blue agave blanco tequila. It’s clear, herbaceous and keeps the full agave signature intact. Avoid mixto tequilas (only 51% agave). They produce a flat, overly sweet cocktail. Reposado or añejo versions, aged in barrels, also work but bring notes of wood and caramel that shift the classic’s profile into something rounder and oakier.

Yes, Cointreau, Grand Marnier and triple sec are perfectly interchangeable in the recipe. Each brand brings its own nuance (rounder, more bitter, drier) but the result stays true to the classic. If you have nothing on hand, ½ oz of fresh orange juice with a pinch of grated zest works in a pinch, but it’s no longer quite the real original recipe.

Pour a generous layer of kosher salt into a small flat plate. Cut a lime wedge and rub the flesh all around the rim of the glass to moisten it well. Then dip the rim into the salt, pressing lightly and rotating the glass. The salt adheres evenly and the glass is ready for the cocktail.

No, not as a pitcher or in advance. The classic margarita is made glass by glass, on the spot, to preserve the freshness of the lime and the exact dilution from the shaker. If you’re hosting a group, set out the tequila, orange liqueur, agave syrup and salt ahead of time, squeeze all your limes at once and keep the juice chilled, then shake each cocktail individually as you serve.

The classic margarita pairs perfectly with my beef fajitas with lime and beer marinade, my tequila and lime pork skewers and my chili lime chicken wings. The lime and salt of the cocktail highlight the spice and char without ever weighing down the meal.
