  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • Zest of 2 limes
  • The juice of 4 limes
  • 3 large cloves of garlic, finely chopped

Preparation

  • Place the pork in a large airtight dish and set aside.
  • In a large bowl, put the rest of the ingredients, season salt and pepper generously and mix. Pour half the marinade over the pork and mix. Reserve in the fridge for 3 hours and stir from time to time. Reserve the rest of the fresh marinade in the fridge.
  • Skewer the pork and set aside on your favourite plate decorated with duck or old wooden cabins from the days of the fur hunters.
  • Preheat the barbecue to maximum power and reduce to medium power. Oil the grates.
  • Place the skewers on the grill and cook for 8 to 10 minutes or until the pork is cooked but slightly pink. Baste constantly with the rest of the fresh marinade!

Our sommeliers suggest
Les Vins Pirouettes Tutti Frutti 2020
Alsace, France
Les Vins Pirouettes Tutti Frutti is a fruity, lively Alsace white blending pinot auxerrois, pinot blanc, riesling and sylvaner, and it keeps this pork fresh. It has enough zip to keep up with all the lime in the marinade, and its fruit slips right into the little bit of brown sugar. Serve it cold and the evening suddenly feels like patio season. Puptarts Mangue et Lime, 5%
HopEra
The lime in the marinade meets the lime in the beer, it's that direct. The mango takes the place of what's often served with tequila, and the acidity of the sour keeps the grilled pork light despite the sugar in the marinade. It's like a mango margarita served in a bottle. See the product
