🌶️ Sticky, tangy wings that vanish in minutes!
These chili lime chicken wings are what I bring out for game day, hockey night, or any evening when I want people talking about the food without me spending three hours in the kitchen. The marinade takes two minutes in the food processor: lime juice, garlic, a big bunch of cilantro, light beer, olive oil, honey and chili-lime seasoning. You brush it on, slide the tray in the oven and let it work. The wings come out lacquered and a little charred at the edges. Nobody stops at one.
🔥 Heat, honey and lime in the same bite
Most wing recipes pick a side: hot, or sweet, or sour. These sit right in the middle. The honey softens the chili without putting it out. The lime brings the acid that wakes up every bite, the cilantro adds a green freshness against the heat, and the light beer rounds it off with a hint of bitterness. Juicy inside, golden and caramelized outside, and no deep fryer anywhere near your kitchen.
🌀 Oven or air fryer, and they freeze like a dream
The oven gives you a full tray at once. The air fryer gives you even crispier skin in less time, and that method is in the recipe too. Either way, cook a double batch. Cooked wings freeze really well, and on some tired Tuesday night you’ll be very glad you did.

🌶️ You control the heat
The chili-lime seasoning is the engine of this marinade, so it’s your heat dial. Want them milder? Use less and add a drizzle more honey. Want them to bite back? Use more, plus a pinch of crushed red pepper flakes. Taste the marinade before it touches the chicken. That’s your last chance to fix it.
🍺 Keep the beer light
The beer has one job here: loosen the marinade so it brushes on easily, and add a thin bitter note against the honey and lime. An IPA or a stout would take over the whole thing. Any light lager from the back of your fridge is perfect. No beer? A splash of chicken broth loosens it the same way.
🔄 Brush often, then stop
Every coat of marinade builds another sticky, caramelized layer on the skin, so don’t be shy. But stop brushing for the last ten minutes. That marinade has touched raw chicken, and it needs the final stretch in the heat to be safe. It also gives the glaze time to set instead of staying wet. Flip the wings halfway through, and keep the brush close.
🌀 The air fryer wins on crunch
Hot air hits every side of the wing at once, and a regular oven can’t match that. Spread the wings out so air can move around each one, and cook in batches if you have to. Brush only at the halfway mark. The whole method is in the recipe, and if you want to go deeper on it, my air fryer chicken wings cover the basics.
❄️ Freeze them cooked
Let the cooked wings cool completely, freeze them in a single layer on a tray, then bag them once solid. Reheat straight from frozen at 400°F (200°C): 15 to 20 minutes in the oven, or 10 to 12 in the air fryer. Almost as crisp as fresh. Double the batch. Always.
📅 Do the boring part the day before
Separate the wings, blend the marinade, and put both in one covered dish or a zip bag in the fridge. Save the cilantro for serving: chop it at the last minute so it stays bright and green on the platter. When your guests walk in, the oven is already hot and the house smells like lime and garlic, and you get to stand around with a drink instead of hiding at the stove.
✅ What to serve with my chili lime chicken wings?
Make it a wing night and put out a platter of cousins. My honey garlic chicken wings and my crispy baked buffalo wings sit nicely next to these, and the rum and coke chicken wings are the ones people ask about. Celery sticks, a cool dip, a cold beer. The lime and ginger pale ale in the pairings below is almost the marinade in a glass.

Preparation
- Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper and arrange the chicken wings on it in a single layer.
- In a food processor, combine the lime juice, garlic, cilantro, beer, olive oil, honey and chili-lime seasoning. Season generously with salt and pepper. Blend until smooth.
- Brush the chicken wings generously with the marinade. Bake for about 45 minutes, or until the wings are golden and caramelized. Brush regularly with the marinade and flip the wings halfway through. Stop brushing for the last 10 minutes of cooking.
- Transfer to a large serving platter, garnish with fresh cilantro and serve right away.
- Air fryer version: Preheat the air fryer to 400°F (200°C). Arrange the wings in a single layer without crowding the basket. Cook in batches if needed. Cook for 25 to 30 minutes, flipping halfway through. Brush with the marinade only at the halfway mark. The result: incredibly crispy wings in less time than in the oven.
Yes, and it’s even better that way. Make the marinade in the food processor, pour it over the wings in a big zip bag or a covered dish, and refrigerate overnight. The lime, chili and cilantro sink deeper into the meat, so the wings come out juicier and more flavorful. The next day, lay them straight on the tray and bake as written.
About 45 minutes, flipping them halfway through. They’re ready when they’re deep golden and sticky. For safety, chicken wings need to reach 165°F (74°C) in the thickest part, measured with an instant-read thermometer without touching the bone. After 45 minutes at 425°F they’re well past that.
Yes. Cook them at 400°F (200°C) for 25 to 30 minutes, in a single layer, flipping halfway through. Brush with the marinade only at the halfway mark. Crispier skin than the oven, in less time.
Absolutely. Cool them completely, freeze them in a single layer on a tray, then move them to a freezer bag. Reheat straight from frozen at 400°F (200°C), about 15 to 20 minutes in the oven or 10 to 12 minutes in the air fryer.
Absolutely. Drumsticks, bone-in thighs and even chicken breasts all work with this marinade. Adjust the time: drumsticks take about 40 to 45 minutes in the oven, bone-in thighs 35 to 40 minutes, and breasts 25 to 30 minutes depending on thickness. Always check with a thermometer: 165°F (74°C) in the center for every cut.
