Ingredients

  • 1 tablespoon baking powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon Italian spices
  • 750 g whole chicken wings, separated (keep the tips)
  • Salt and pepper from the mill

Ingredients for the sauce

  • 6 garlic cloves, very finely chopped
  • Olive oil
  • 1/4 cup La Visite Guided IPA beer by the l’Espace public brewery
  • 1/4 cup honey
  • 1 1/2 tablespoon brown sugar
  • 1 tablespoon molasses
  • 1 teaspoon onion powder
  • 1 teaspoon soy sauce
  • 1/2 teaspoon Italian spices
  • Salt and pepper from the mill

Preparation

  • Preheat the oven to 400° F. Line a large baking sheet with parchment paper.
  • In a bowl, put the baking powder, paprika and Italian spices then generously salt and pepper. Mix.
  • Place the chicken wings in a large bowl, pour in half the spice blend and toss. Add the rest of the spices and mix again. Add a good drizzle of olive oil and toss to coat.
  • Distribute the chicken wings on the baking sheet and place in the oven. Cook for 40 minutes and flip halfway through cooking.
  • Meanwhile, prepare the sauce. In a small saucepan heated over medium-low heat, add the garlic followed by a drizzle of olive oil. Cook 3 to 4 minutes, stirring constantly.
  • Add the rest of the ingredients, season with salt and pepper and mix. Bring to a boil, reduce heat to low and simmer 2 minutes, stirring. Remove from the heat and let cool for 10 minutes.
  • When the wings are cooked, remove from the oven and put the large bowl. Pour in the sauce and toss well to coat.
  • Throw the wings onto the baking sheet and distribute. Bake for 15 minutes or until dark and crispy. Flip halfway through cooking. Be careful, the sweet sauce could cause your wings to burn quickly. Keep a ninja eye on it! Leave to rest for a few minutes before tasting.
