Another great collaboration with Lone Tree, the Vancouver cider company . This creamy cucumber, tomato and herb salad with cider vinaigrette will go perfectly with your grilled summer. Do you have any leftovers? Lucky you, it’s also very good at lunch with a good baguette!

Ingredients
- 3 cups diced cucumber
- 1 pint (283 g) cherry tomatoes, cut in half or in four
- 1/4 cup fresh parsley chopped very finely
- 1/4 cup chopped mint very finely
- 2 tablespoons chopped fresh chives
- Salt and pepper from the mill
Ingredients for the vinaigrette
- 1/4 cup mayonnaise
- The zest of 1/2 lemon
- 2 tablespoons Apple and Pear cider by Lone Tree
- Salt and pepper from the mill
Preparation
- In a large bowl, add all the ingredients for the salad and toss.
- In another bowl, add the ingredients for the dressing and season with salt and pepper. Toss.
- Pour the vinaigrette over the vegetables and mix. Reserve in the fridge for 30 minutes then serve!
