🍑 The summer mocktail I serve when I have guests

I don’t drink alcohol anymore, so I’m always looking for fresh, interesting and refreshing mocktails. Not just “sparkling juice to pretend”. A real drink built with depth of flavor. I saw a girl on Instagram who makes lots of creative mocktails and there was one with carrot juice. At first I found the idea gross, then I tested it. The result is a bright orange mocktail, slightly sweet-spicy, completely delicious, that made me completely change my mind. It became my signature mocktail for when I host this summer.

🥕 The secret: carrot juice

Nobody thinks of carrot juice in a mocktail, but that’s exactly what sets my version apart from all the peach-ginger cocktails you see around. Carrot brings two things: a flaming orange color that makes your drink look pro in the glass, and a natural sweetness that balances the heat of fresh ginger without adding refined sugar. Combined with peach, lime and a bit of fresh grated ginger, you get a complex concentrate that tastes much more than the sum of its parts.

🧪 The meal-prep concentrate for the whole week

The other reason this recipe is completely insane is that we make a concentrate in advance that keeps for a full week in the refrigerator. You prepare it Sunday night, put it in a Mason jar in the fridge, and all week you just have to take out a glass, fill with ice, add ⅓ cup of concentrate and top with sparkling water. Pop pop pop, mocktail ready in 30 seconds. It’s perfect for people who don’t drink in general, for pregnancy, for your Dry January, or just for those who want a great summer drink without feeling like they’re drinking ordinary fruit juice. Serve in a large glass, Mason jar or 32 oz deli quart container to bring to the park or pool.

🔥 Tips and tricks for a perfect peach-ginger mocktail

🥕 Carrot juice, my signature secret

This is what sets my mocktail apart from all the other peach-ginger cocktails you see online. Carrot brings two essential things: a flaming orange color that makes the drink absolutely pro in the glass, and a natural sweetness that balances the heat of fresh ginger without adding refined sugar. Buy unsweetened carrot juice from the fresh juice section (like Tropicana, Bolthouse Farms, or health brands in refrigerated). Not Tetra Pak canned juice which is often too sweet or diluted.

🧪 The meal-prep concentrate, the real genius of the recipe

You prepare your concentrate Sunday night (10 minutes), put it in a sealed Mason jar in the fridge, and you have 6 mocktails ready in 30 seconds all week. When you have a friend over spontaneously or want a drink Wednesday night watching your show, you take out a large glass, ice, ⅓ cup concentrate, sparkling water, and boom. Pop pop pop. If you’re hosting more people, simply double the concentrate recipe. The double batch also keeps 1 week in the fridge.

🍑 Ripe but firm peaches

For both the concentrate and assembly, choose peaches that are very ripe but still firm to the touch. Too ripe, they turn into compote and the concentrate becomes mushy even after straining. Not ripe enough, the concentrate lacks fruity depth. The classic test: the peach yields slightly under thumb pressure without becoming soft. If it’s out of season, frozen peaches make an excellent backup for the concentrate (thaw first).

🌿 FRESH mint at assembly, never dried

Dried mint has no point in this mocktail. It’s fresh mint, lightly muddled to release its essential oils, that brings that herbaceous freshness that complements the peach-ginger. About ten leaves per large glass is generous and intentional. If you want to push further, also add a fresh basil leaf. A combo that works beautifully.

🥄 Muddle with a muddler or wooden spoon (not crush)

At assembly, you want to MUDDLE gently, not crush to death. A few firm presses with a bartender’s muddler (or wooden spoon handle) are enough to release the aromas from peaches, lime and mint without reducing everything to mush. If you crush too much, your mint releases its bitter tannins and your drink becomes harsh. Three or four muddles is perfect.

🍯 Quebec maple syrup (or honey)

Maple syrup brings a round sweetness with caramelized notes that pair better than simple syrup or agave syrup. Everyone has maple syrup in Quebec, so it’s my default choice. If you don’t have any, honey does the job (but changes the flavor angle slightly, more floral, less caramelized). Avoid white sugar dissolved in water, it stays flat and without personality.

🍸 Alcoholic version if you want

For those who want to transform this mocktail into a cocktail, add 1 ½ oz (45 ml) of the alcohol of your choice at assembly time: vodka to stay neutral and let the flavors shine, gin for a herbaceous side, white rum for a tropical twist, or Peach Schnapps to push the peach even further. The drink structure stays the same. The concentrate, fresh fruits and sparkling water frame the alcohol perfectly.

It’s a versatile drink that does its job in all summer contexts. Serve it at happy hour on the terrace, at Sunday brunch next to my Blueberry and lemon waffles, at the pool in a large Mason jar, or at the park in a deli quart container to take away with my Tomato bruschetta. If you have several friends who don’t drink (Dry January, pregnancy, or just sober), prepare the double batch of concentrate and keep it in the fridge. Everyone serves themselves as they go.

Concentrate (makes about 2 cups / 500 ml. For 6 glasses)

  • 1 peach, diced
  • Juice of 1 lime
  • 1 tsp (5 ml) fresh grated ginger
  • ⅓ cup (80 ml) carrot juice
  • 2 cups (500 ml) water

For 1 large glass (32 oz / 1 L) or Mason jar

  • 1 peach, diced
  • 1 lime, diced
  • 1 handful fresh mint (about 12 leaves)
  • 2 to 4 tbsp (30 to 60 ml) maple syrup
  • Ice cubes
  • ⅓ cup (80 ml) concentrate
  • Sparkling water, to top

Preparation

  • For the concentrate, puree until smooth the peach, lime juice, ginger, carrot juice and water in a blender.
  • Strain the mixture through a fine mesh sieve and discard solids. Store concentrate in a Mason jar in the refrigerator for up to 1 week.
  • For assembly, in a large glass, Mason jar or 32 oz (1 L) deli quart container, place the diced peach, diced lime, mint and maple syrup. Gently muddle with a muddler or wooden spoon handle to release aromas.
  • Fill with ice then add the concentrate.
  • Top with sparkling water. Stir gently and serve immediately.

Yes, it’s a classic combo in Asian cuisine and mixology for a long time. Peach brings a floral, sweet and slightly acidic side, while fresh ginger brings spicy heat and clean bite. Both complement each other perfectly. The sweetness of peach calms the heat of ginger, and ginger prevents peach from falling into “too sweet”. With carrot juice and lime on top, you get a complex and balanced flavor profile that never tastes flat.

The concentrate (500 ml) makes about 6 large format mocktails. The calculation: ⅓ cup (80 ml) concentrate per glass × 6 glasses = 480 ml used. If you make your batch on Sunday, your concentrate is good until Friday-Saturday no problem. To extend the duration, you can freeze part of the concentrate in a Mason jar with 1 cm space at the top. It keeps 2-3 months and you thaw in the fridge the night before.
