Preparation

  • Preheat the waffle maker to medium temperature.
  • In a big bowl, add flour, brown sugar, baking powder and salt then combine. Set aside.
  • In a bowl, add eggs, milk, oil, rum and lemon zest then whisk to combine. Incorporate in the dry ingredients and whisk intensively to remove all chunks. Add the blueberries and stir gently. Pour in a cup with a spout.
  • Pour the batter about one cup at a time (please refer to your waffle maker manual) and cook for about 3-4 minutes until cooked and golden. Cooking time may vary between models, of course. One again, read the manual ! You can reserve the waffle in the oven at 200°F (do not pile !), but, waffles tend to get soft fast. I suggest eating them as you make them for an optimal freshness ! Garnish with fresh blueberries, butter and maple syrup on top !

Our sommeliers suggest
Bartenura Moscato 2021
Lombardie, Italie
Fresh, sweet, light and sparkling, this Moscato shows fruit salad notes in summer! It will be very interesting with breakfast crepes, gelato, fresh fruit desserts, or waffles, as is the case here. See the product
Sirène Bleuet, 5%
Le Ketch
This tart graf, a blend of blueberry beer and raw apple juice, will give you apple and berry aromas. Its light acidity balances the sweetness of the waffles while picking up the lemon and blueberry in the recipe. Think of it as a beer and cider hybrid from the lower St. Lawrence, for a very homegrown waffle on a Sunday morning. See the product
