  • 2 cups all-purpose flour
  • 1 tablespoon brown sugar
  • 3 teaspoons baking powder
  • A pinch of salt
  • 2 eggs
  • 2 cups milk
  • 1/4 cup vegetal oil
  • 1/2 teaspoon dark rum (or vanilla extract)
  • Zest from 1 lemon
  • 3/4 cup blueberries chopped

Preparation

  • Preheat the waffle maker to medium temperature.
  • In a big bowl, add flour, brown sugar, baking powder and salt then combine. Set aside.
  • In a bowl, add eggs, milk, oil, rum and lemon zest then whisk to combine. Incorporate in the dry ingredients and whisk intensively to remove all chunks. Add the blueberries and stir gently. Pour in a cup with a spout.
  • Pour the batter about one cup at a time (please refer to your waffle maker manual) and cook for about 3-4 minutes until cooked and golden. Cooking time may vary between models, of course. One again, read the manual ! You can reserve the waffle in the oven at 200°F (do not pile !), but, waffles tend to get soft fast. I suggest eating them as you make them for an optimal freshness ! Garnish with fresh blueberries, butter and maple syrup on top !
