Cherry Clafoutis

The cherries go in the pan first, with butter, maple syrup and a splash of strong Belgian dark ale. They caramelize, the beer reduces, and all that’s left is its malty side, which brings out the cherry flavour.

After that, it’s a classic clafoutis. A cream and brown sugar custard with a little hint of almond, poured over the top and baked until the centre is set.

Frozen cherries work perfectly, so you can make it in the middle of winter. And it’s just as good warm, lukewarm or cold.
