What exactly is a butter chicken? It is a recipe native from India that consists of chicken (DUH), butter, tomatoes and spices. Here is my easy yet ultra tasty version just for you!

Ingredients

  • 3 tablespoons butter
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 3 boneless and skinless chicken breasts, cut in big cubes
  • 1 tablespoon curry powder
  • 1 can 400ml of light coconut milk
  • 1 can 284ml condensed tomato soup
  • 2 cups cauliflower, cut in medium chunks
  • 2 cups green beans, cut in half
  • Fresh coriander to garnish
  • Salt and ground pepper

Preparation

  • In a big pan at medium heat, melt the butter and cook the onion and garlic for 2-3 minutes.
  • Add the chicken, the curry, season with salt and pepper then stir well. Cook for 5 minutes.
  • Add the coconut milk, the condensed soup and the cauliflower then stir well. Always at medium heat, simmer for 10 minutes while stirring often.
  • Add the green beans and stir. Simmer for another 10 minutes to let that sauce reduce! Serve on your favorite rice and garnish with fresh coriander!

Not always easy to pair spicy indian cuisine with wine! Here is a greek one that is not expensive and way too good to be true! With it's exotic and grilled accents, it will simply be perfect.

+- 30$ E. Guigal Crozes-Hermitage 2014

We all know the reds from the Rhône but what about the white ones? A fresh wine featuring a nice texture along with floral and spicy notes.

Scotch Ale, La Chouape

The butter, coconut milk and curry of this recipe will pair well with the aromas of caramel, toffee, maple and berries from this scotch ale. The roundness in palate of the beer will evoke the creamy texture of the dish. Its alcohol content will blend into the fat of the dish.
