- 3 tablespoons butter
- 1 medium yellow onion, finely chopped
- 2 garlic cloves, finely chopped
- 3 boneless and skinless chicken breasts, cut in big cubes
- 1 tablespoon curry powder
- 1 can 400ml of light coconut milk
- 1 can 284ml condensed tomato soup
- 2 cups cauliflower, cut in medium chunks
- 2 cups green beans, cut in half
- Fresh coriander to garnish
- Salt and ground pepper

Preparation
- In a big pan at medium heat, melt the butter and cook the onion and garlic for 2-3 minutes.
- Add the chicken, the curry, season with salt and pepper then stir well. Cook for 5 minutes.
- Add the coconut milk, the condensed soup and the cauliflower then stir well. Always at medium heat, simmer for 10 minutes while stirring often.
- Add the green beans and stir. Simmer for another 10 minutes to let that sauce reduce! Serve on your favorite rice and garnish with fresh coriander!
