This nordic shrimp salad is THE perfect salad to refresh you this summer! Whether as a starter or as a main meal, you won’t be disappointed. Drink with Ryan Patrick Chardonnay Rock Island Columbia Valley 2018. This Chardonnay aged 6 months in oak barrels is rich, round and very aromatic. It will appeal to lovers of buttery, vanilla and exotic notes.

Dressing
- 2 tablespoons mayonnaise
- 1 tablespoon olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 3 pinches Provence herbs
- Salt and pepper from the mill
Ingredients
- 400 g cooked nordic shrimps (sizes 125-175), thawed, rinsed and drained
- 1 tub (250 g) cherry tomatoes, halved
- 1 cup arugula
- 2 tablespoons finely chopped red onions
- 1 ripe but firm avocado, sliced
- 1 celery stalk, thinly sliced
- Salt and pepper from the mill
Preparation
- In a bowl, put the ingredients for the dressing, season with salt and pepper and mix. Reserve in the fridge.
- In a salad bowl, put the ingredients for the salad, season with salt and pepper and toss. Add dressing to taste and mix. Serve with a baguette!
