I love broccoli, it’s probably one of the vegetables I cook most often at home. For a long time, I steamed it and it was okay, but the day I tried it in the air fryer, I realized I was missing out on something. 🔥 The secret to perfect crispy broccoli
The key is to never pile the florets on top of each other in the basket. If you do that, your broccoli will steam instead of roast, and you’ll end up with a soft and disappointing result. Do it in two batches or use both baskets if your air fryer allows it. The smoked paprika and garlic powder make all the difference on the tips. It browns, it crisps, and around 15 minutes you start getting caramelized bits that taste like heaven.

🥦 Medium florets for even cooking
Cut your florets into medium pieces, roughly the same size. Too big and the center stays raw while the tips burn. Too small and you end up with dry crumbs. Keep the stems. Chop them finely and mix them with the rest, they’re full of flavor and crisp up well.
⚡ Single layer, always
This is the number one rule of the air fryer and the reason why your broccoli will be crispy instead of soft. If the florets are piled on top of each other, they’ll steam instead of roast. Use both baskets of your air fryer or do two batches. Never compromise on this.
⏱️ 12 minutes tender, 15+ minutes crispy
Around 12 to 15 minutes, your broccoli is well-cooked and tender. If you want crispy and caramelized bits, push to 15 to 20 minutes while watching the last few minutes. The tips can go from golden to burnt pretty quickly, so stay close.
🧂 The flaky salt finish
A little bit of flaky salt right out of the air fryer makes all the difference. The salt sticks to the hot crispy tips and adds an extra crunchy texture that fine salt doesn’t give. No need for anything else. The broccoli is good as is.
🌡️ Preheat the air fryer
A few minutes of preheating at 400°F (200°C) before adding the broccoli makes a big difference. The florets start roasting as soon as they touch the hot basket instead of taking 5 minutes to warm up slowly. Result: crispier broccoli in less time.
🔄 Shake the basket halfway through
Halfway through cooking, open the drawer and shake the basket so the pieces turn over. This allows the sides that were in contact with the bottom to be exposed to the hot air and brown evenly. It’s a habit to develop with everything you make in the air fryer.

- 600 g broccoli florets, cut into medium pieces (stems kept and finely chopped)
- 2 tbsp (30 ml) olive oil
- ½ tsp (2.5 ml) garlic powder
- 1 tsp (5 ml) smoked paprika
- Salt and pepper, to taste

- Preheat the air fryer to 400°F (200°C) for a few minutes.
- In a large bowl, mix the broccoli florets and chopped stems with olive oil, garlic powder, smoked paprika, salt and pepper until everything is well coated.
- Spread the broccoli in a single layer in the air fryer basket, without stacking. Cook in two batches if necessary.
- Cook 12 to 15 minutes for well-cooked and tender broccoli, or 15 to 20 minutes for crispy and caramelized tips. Shake the basket halfway through cooking.
- Watch the last few minutes. Broccoli can go from golden to burnt quickly.
- Transfer to a serving dish and sprinkle with flaky salt. Serve immediately.
Frozen broccoli is a no. Frozen broccoli contains way too much water. Instead of roasting and crisping, it will soften and become mushy in your air fryer. You need fresh broccoli, period. Plus, frozen florets are often already blanched, so the texture will never be the same. Fresh broccoli is available year-round at the grocery store, so there’s no reason to cut corners.
