I am starting to be excited to see spring arrive ! This pimped Waldorf salad is my way to bring a bit of sun in this never ending winter of ours. Come on guys, hang in there !

Ingredients
- 540 ml chickpeas, ringed and well drained
- 4 big celery sticks, cut in half lengthwise then finely sliced
- 3 big McIntosh apples peeled, cored and diced
- 2 shallots, finely sliced
- 1/2 fennel bulb, cut in half then finely sliced
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1 cup green grapes cut in half
- 1/2 cup dried cranberries
- 1/2 cup walnuts, coarsely chopped
- Zest from 1 lemon
- A big handful fresh parsley, chopped
- 6 tablespoons light mayonnaise
- 2 tablespoons apple cider (or real apple juice)
- 1/2 teaspoon paprika
- Salt and ground pepper
Preparation
- In a very big salad bowl, add all the ingredients then generously season with salt and pepper. Toss like a ninja and place in the fridge for 30 minutes. Serve with a bread baguette and a nice brie cheese !
