🐣 Born with my kids, at Easter time

These squares were born with my kids, back in the day, around Easter. I wanted to make classic Rice Krispies squares, but with my own twist on it. So I threw in chocolate. A little touch that’s a bit naughtier than the original. It stuck around and became a staple at our place ever since.

This is a dessert I genuinely love, not just another recipe in the pile. Melted butter and marshmallows give it that soft, almost sticky texture, and the Mini Eggs break through with their chocolate crunch. Fifteen minutes of prep, zero oven time, and it disappears faster than you can cut it into squares.

This really isn’t just an Easter thing. Mini Eggs are good year round, and so are these squares. After-school snack or next-day lunch box, make them whenever. Not only on Easter Sunday.

🔥 Tips and tricks for perfect squares

📦 The real secret: wrap them airtight

This is THE rule at our house. The second they’re cut, my squares go straight into a sealed airtight container. That’s what keeps them soft more than anything else, more than the recipe itself. Leave them out even an hour and the edges start drying out.

🔥 Always on the stovetop

Never the microwave here. A saucepan over low heat gives control the microwave just doesn’t, and the marshmallows melt evenly without scorching on one side.

🥄 It’ll stick, and that’s normal

A silicone spatula, lightly greased if you want, helps spread the mixture into the pan. But it’s still going to stick in spots. That’s normal, don’t stress over it.

🍫 Chopped or crushed, both work

Whether you roughly chop your Mini Eggs with a knife or crush them a bit under a rolling pin, you get nearly the same result. Pick whichever method makes less of a mess for you.

📅 Make it ahead

You can make these the day before without any issue. Cut into squares, wrapped up airtight, they’ll wait for you until tomorrow without losing their softness.

🌡️ Store at room temperature, never in the fridge

Honestly, you don’t put Rice Krispies squares in the fridge. The cold hardens them and makes the marshmallow sweat. Leave them at room temperature, in an airtight container, for about 5 days.

Rice Krispies Squares with Mini Eggs

  • 1/4 cup (60 ml) butter
  • 400 g marshmallows
  • 1 tsp (5 ml) vanilla extract
  • 6 cups (1.5 L) Rice Krispies cereal
  • 200 g Mini Eggs, coarsely chopped or lightly crushed

Preparation

  • Melt butter in a large saucepan over low heat.
  • Add the marshmallows and vanilla extract and cook, stirring, for 10 to 12 minutes, until the marshmallows are completely melted and smooth.
  • Remove the pan from the heat and add the Rice Krispies cereal and chopped Mini Eggs. Mix gently until everything is well coated.
  • Line an 8×8-inch square pan with parchment paper. Pour the mixture into the mold and press lightly with a silicone spatula, lightly greased if you want (it’ll stick, and that’s normal).
  • Cool completely at room temperature (approx. 30 minutes). Once set, cut into equal squares and serve!

Wrap them airtight the moment they’re cut. A sealed container traps the moisture in and stops the edges from drying out. Also watch your marshmallows on the stove, cooking them too long over high heat gives you hard treats instead of soft ones.

About 5 days, in an airtight container, at room temperature. Never in the fridge, the cold makes them harder and does more harm than good.

I haven’t tested a swap myself, but in theory, milk chocolate chunks, chocolate candy-coated pieces, or peanut butter candy pieces would work. It’s an idea worth trying, not a guarantee.

No, I don’t suggest it. The marshmallow texture turns grainy once it thaws. Make them the day before instead and keep them at room temperature, that solves the timing problem without losing the softness.

Because it’s a melted marshmallow mixture, it’s going to stick a bit no matter what you do. A lightly greased silicone spatula helps a lot, but expect it to grab in a few spots anyway. That’s normal.
