Rice Krispies Squares with Mini Eggs

  • 1/4 cup (60 ml) butter
  • 400 g marshmallows
  • 1 tsp (5 ml) vanilla extract
  • 6 cups (1.5 L) Rice Krispies cereal
  • 200 g Mini Eggs, coarsely chopped or lightly crushed

Preparation

  • Melt butter in a large saucepan over low heat.
  • Add the marshmallows and vanilla extract and cook, stirring, for 10 to 12 minutes, until the marshmallows are completely melted and smooth.
  • Remove the pan from the heat and add the Rice Krispies cereal and chopped Mini Eggs. Mix gently until everything is well coated.
  • Line an 8×8-inch square pan with parchment paper. Pour the mixture into the mold and press lightly with a silicone spatula (otherwise, it’ll stick!).
  • Cool completely at room temperature (approx. 30 minutes). Once set, cut into equal squares and serve!
