Ingredients

  • Smoked picnic pork shoulder with bone, approx. 2.5kg
  • 1 liter pineapple juice
  • 473 ml L’Infusée aux Trois Thés white beer by Brasseurs du Monde (or other white beer to taste)
  • 5 cloves
  • 1/3 cup maple syrup
  • 6 large garlic cloves, peeled and crushed
  • 1 small yellow onion, finely chopped
  • Salt and freshly ground pepper

Preparation

  • Preheat oven to 350°F.
  • In a large casserole dish, place pork shoulder, rind side down.
  • Add remaining ingredients, season generously with salt and pepper, and stir. Cover, bring to the boil and place in the oven. Bake for 3 hours, stirring occasionally.
  • Carefully remove the ham from the casserole and place on a work surface. Fluff the meat and discard the fatty bits. Serve with mashed potatoes and
  • drizzle ham with pan juices.
