Melon salad with feta and fresh herbs

Sometimes you have to go back to simplicity to make kick ass meals. This melon salad with feta and fresh herbs is not only very tasty but above all very simple to make. To be served with a baguette of bread and nice cheeses !

Ingredients
- 4 cups watermelon diced
- 3 cups Santa Claus melon ( or honeydew melon ) diced
- 200g feta cheese, diced
- 1/4 cup unsalted sunflower seeds
- 1/4 of a small red onion, sliced very finely (or less to taste)
- 20 fresh basil leaves, chopped
- 12 fresh mint leaves, chopped
- Olive oil
- Salt and freshly ground pepper
Preparation
- In a large bowl, add the melons and reserve in the fridge for 10 minutes. Drain the water accumulated at the bottom.
- Add the rest of the ingredients followed by a thin stream of olive oil. Season with salt and pepper and mix well. Serve with a bread baguette and cheeses!
