The secret to a real homemade lemonade that doesn’t taste like granulated sugar floating at the bottom of your glass? Simple syrup. We dissolve the sugar in hot water to get a perfectly integrated liquid that instantly mixes with cold lemon juice and ice water. No grains, no separation, just smooth and balanced lemonade from first to last glass. And with 2 cups of fresh lemon juice (about 10 large lemons) for 7 cups of water, the ratio is exactly right. Lemony without being aggressive, sweet without being syrupy.

🍋 Fresh lemon juice mandatory

No compromise here: always use real hand-squeezed lemon juice, never bottled juice. The difference in freshness and taste is huge. Standard grocery store lemons (Lisbon, Eureka) are the most practical and accessible. Count about 10 large lemons to get your 2 cups (475 ml) of juice.

🌡️ Cool the simple syrup before assembling

Really let the simple syrup cool for 10 minutes before adding it to the pitcher. If you pour it hot, it will warm up the entire lemonade and melt your ice cubes too quickly, giving you lukewarm and diluted lemonade. 10 minutes of patience = perfect ice-cold lemonade.

🍯 Maple syrup variation

You can absolutely replace the sugar with 1.5 cups (375 ml) maple syrup or more to taste. The result will be less clear and less transparent than a classic white sugar lemonade, but the taste is delicious and gives you a purely Quebec touch. No need to make simple syrup. Add maple syrup directly to cold water and stir.

🍓 Fruit variations. Raspberry, strawberry and company

For a fruity variation, add 1 to 2 cups of crushed fresh fruit (raspberries, strawberries, blueberries, blackberries) directly in the pitcher before adding lemon juice. You can strain if you don’t like pieces. Homemade raspberry lemonade is another level.

🥤 Sparkling version

Want a homemade sparkling lemonade like Sprite? Replace 2 to 3 cups of still water with sparkling water (Bubly, Perrier, seltzer water) when serving. Not before, otherwise the bubbles escape. Pour directly into the glass over the classic lemonade to keep the fizz.

  • 2 cups (440 g) sugar
  • 7 cups (1.6 liter) water, divided
  • 2 cups (475 ml) fresh lemon juice (about 10 large lemons)
  • 4 cups ice cubes
  • Lemon slices and a few fresh mint leaves, for garnish (optional)

  • In a small saucepan, bring 2 cups water and sugar to boil over medium-high heat, stirring until sugar is completely dissolved. Remove from heat and let cool 10 minutes (this is your simple syrup).
  • In a large 3.5-liter glass pitcher, place ice cubes and pour the remaining 5 cups of water.
  • Add fresh lemon juice and cooled simple syrup. Mix well with a long-handled spoon.
  • Garnish with lemon slices and a few fresh mint leaves if desired.
  • Refrigerate until serving and add a few extra ice cubes to each glass before serving.
