I wanted to cook dumplings in syrup with an alcoholic product from Subversifs, more precisely the Réduit à l’Érable Léo, a blend of their Marie-Victorin gin and Quebec maple reduction. Big juice and clearly a must have in your kitchen. If you don’t know this distillery from Sorel-Tracy, I invite you to visit their website and discover their legendary universe!

Ingrédients pour le sirop

  • 1 can of maple syrup (540 ml)
  • 1 1/2 cups of water
  • 1 cup of LÉO maple reduction by Les Subversifs

Ingrédients pour la pâte

  • 2 cups all-purpose flour
  • 2 tbsp. brown sugar
  • 2 tsp. baking powder
  • 3 pinches of salt
  • 1/4 cup soft butter
  • 1 cup milk
  • 1 teaspoon of LÉO maple reduction by Les Subversifs

Preparation

  • In a large saucepan, add the ingredients for the syrup and mix. Heat over medium heat and set aside. Reduce heat if mixture starts to boil.
  • In a large bowl, add flour, brown sugar, baking powder and salt and mix with a whisk to break up the brown sugar.
  • Add the soft butter and mix with your hands to break up the butter and obtain a grainy texture.
  • Add milk and the réduit and with a spoon, mix just enough to moisten the dry ingredients.
  • Drop balls of pasta into the syrup, one large tablespoon at a time, and drizzle with syrup.
  • Bring to a boil, reduce heat to low and cover. Simmer for 15 minutes, basting the grandfathers from time to time. Serve immediately, accompanied by vanilla ice cream and drizzle with syrup from the pan!

The outcome of the typical sugaring-off tradition with the one difference being that the boiler operator adds gin to the reduction, Léo is a unique product that proudly celebrates the essence of Quebec. It’s a combination of our Marie-Victorin gin and Quebec maple reduction. The maple aroma is unmistakable, adding its anticipated sweetness, while the juniper berry adds a subtle layer to this gin that should be “top-shelf” in every bar in Quebec. See the product
