🥄 The dressing born from my best potato salad

This creamy maple and smoked paprika dressing, I invented it while developing my meilleure salade de pommes de terre au bacon. When I first tasted it, I knew it deserved its own separate recipe. It’s the kind of dressing that goes on absolutely anything. Grilled shrimp, green salad, coleslaw, meat drizzled after cooking, or even as a sauce in tacos. The combination of creamy mayo, tangy Dijon mustard, tart apple cider vinegar, Quebec maple syrup and smoked paprika creates a versatile dressing with unique character.

🌶️ The two tricks to make it perfect

First trick: consistency. The first time I made it, it was too thick. I had to adjust my liquid level so it would be creamy but still fluid enough to coat around ingredients. If yours comes out a bit too thick for your taste, add a little water or an extra splash of apple cider vinegar, until you reach the desired consistency. Second trick: smoked paprika makes all the difference. It’s what brings that little spicy taste characteristic that reminds you of BBQ and transforms an ordinary dressing into something memorable. You can use regular paprika in a pinch, but smoked gives a character you won’t find otherwise. My favorite is the paprika doux fumé that I always keep in my spice cabinet.

This creamy maple and smoked paprika dressing is the secret weapon to have in a Mason jar in your fridge. For a classic coleslaw, pour it over your shredded cabbage and you have a coleslaw that’s out of the ordinary. For BBQ grilled shrimp, drizzle them after cooking and you get an incredible BBQ-smoked combo. For tacos, use it as a creamy sauce to replace classic hot sauce. For a grilled piece of meat, drizzle after cooking to add a sweet-smoky umami touch. My friend Véronique, who I had taste this dressing, automatically took a photo of the recipe to make it at home. I always use commercial mayonnaise because I always have it in the fridge and it does the job perfectly. But if you want to take your dressing to another level, use my Homemade mayonnaise. The dressing becomes even creamier and the taste is incomparable.

🍎 Apple cider vinegar for the fruity touch

Apple cider vinegar brings a subtle apple flavor that pairs beautifully with maple syrup and smoked paprika. That’s what gives this dressing its unique profile. You can replace with white wine vinegar in a pinch, but you lose the fruity side.

🍯 Dark maple syrup for depth

Go for an amber or dark maple syrup (formerly category B/C). Its caramelized depth pairs better with smoked paprika than the delicate golden syrup from early season. Regular sugar doesn’t give the same result at all. It’s the maple that gives the Quebec character to the dressing.

🫙 Storage 5 to 7 days, better with time

This dressing keeps easily 5 to 7 days in an airtight Mason jar in the fridge. Good news: the flavors develop a bit over time, so it’s even better the next day. If you make a big batch for the week, you can double the recipe without problem.

🌮 Optional twists to personalize

Want to vary? Add half a teaspoon of chipotle powder for extra smoky heat, a splash of lime juice for more freshness, or half a grated garlic clove for more punch. For a taco version, grated garlic and lime are my two favorite additions.
