🔥 The best chicken marinade I make, and I had all summer to change my mind

When the grill is already hot, nobody wants to stand at the counter assembling a marinade out of eleven ingredients. This BBQ chicken marinade is five minutes of work with things you already own. What sets it apart from most chicken marinade recipes is where it starts: not vinegar and soy sauce, but barbecue sauce. That is the whole trick. A chicken marinade with BBQ sauce already carries smoke, sugar and acid in balance, so you are not building those three things from scratch and hoping they land. I use my homemade classic smoky BBQ sauce, and against a bottled one the difference is not subtle. Up here I grill Quebec chicken, which is what we get in the province, sold fresh rather than frozen. 🫙 One Mason jar, thirty seconds of shaking, and you are done

No bowl. No whisk. Everything goes into a 16 oz (500 ml) Mason jar, lid on, shake hard for thirty seconds. The jar is also where the marinade lives afterward, a full week in the fridge, nothing to transfer and nothing extra to wash. That last detail is the reason this one survived in my rotation and a dozen others did not. A make-ahead marinade you have to decant is a marinade you quietly stop making. Double the batch on Sunday and Tuesday and Thursday are already handled.

🍖 The title says chicken. It does not stay chicken for long.

Chicken is on the label because chicken is what most people throw on a grate. But this marinade handles pork chops, beef flank steak, shrimp at thirty minutes maximum, and pressed firm tofu. It also works nowhere near a barbecue: oven at 400°F (200°C), slow cooker, air fryer. My preferred plate, and I will not be argued out of it: marinated chicken, grilled corn, potato salad, and a serious spoonful of coleslaw.

🔥 Tips and tricks for the best BBQ chicken marinade

🫙 The Mason jar is the whole method

Forget the whisk and the bowl. Everything goes in a 16 oz (500 ml) Mason jar, lid on, thirty seconds of shaking. The oil and the BBQ sauce emulsify better this way than they ever do in a bowl, and the jar doubles as the storage container. One dish to wash instead of four.

⏱️ How long to marinate chicken, and where the ceiling is

Two to three hours in the fridge is the floor. It works, but it is a compromise. The version worth planning for is the overnight chicken marinade: eight to twelve hours, and the smoked paprika and garlic get all the way through instead of sitting on the surface. Thick breasts especially need that time. Past twenty-four hours you gain nothing, and shrimp or tofu should never see more than thirty minutes.

🚫 Pour some off first. This is a food safety rule, not a preference.

Before the raw chicken touches anything, set aside 2 to 3 tablespoons (30 to 45 ml) of clean marinade in a separate container. That reserved portion is what you brush on while the chicken grills, and it is what gives you the glossy caramelized coat you cannot get any other way. The marinade that held raw chicken does not go back on cooked meat and does not become a sauce. Throw it out. This is the single mistake I see most often at other people’s barbecues.

🌶️ If you want it hotter

The base is deliberately mild so it works for a whole table. To push it: ½ teaspoon (2.5 ml) chipotle powder for smoky heat, a pinch of red pepper flakes for a slow background burn, or a squeeze of sriracha for something more immediate. Taste the marinade in the jar before the chicken goes in. Once it is on raw meat you have lost the chance.

🍗 Breasts, thighs, drumsticks: same jar, different clock

Boneless breasts are the classic use and the one this BBQ chicken breast marinade was built around, but the marinade is honestly better on dark meat. Thighs and drumsticks carry more fat, so the smoke and the sugar have something to cling to and they forgive an extra few minutes on the grate. If thighs are your default, I have a whole recipe for {a(‘thighs’,’BBQ chicken thighs in the air fryer’)}. For {a(‘skewers’,’BBQ chicken skewers’)}, cube the breast first and cut the marinating time in half, because more surface means faster.

🍳 No grill, no problem

Four ways this works indoors. Oven: 400°F (200°C), 25 to 30 minutes for breasts, flipped halfway. Slow cooker: 4 hours on low, which turns thighs into something you eat with a fork. Air fryer: 380°F (193°C) for 15 to 18 minutes, turning once. Cast iron: 4 minutes a side for thin cutlets. Chicken is done at 165°F (74°C) in the thickest part, and a thermometer is the only honest way to know.

🌿 Three small changes that take it somewhere else

Sweeter, add a tablespoon (15 ml) of honey or maple syrup. Greener, a teaspoon (5 ml) of dried oregano or thyme. Sharper, a tablespoon (15 ml) of lemon juice or cider vinegar. 🧊 The freezer bag trick

The marinade keeps a week in a sealed jar in the fridge. But the real move is a freezer chicken marinade: raw chicken and marinade go into a freezer bag together, flat, and into the freezer. Pull one out in the morning and it thaws and marinates at the same time in the fridge. By six o’clock dinner has already made itself. I keep three or four of these going at all times through July.

✅ What to serve with BBQ marinated chicken

Chicken off the grill with a sweet smoky glaze needs sides with some acid and some crunch, or the whole plate goes flat. My creamy coleslaw with pancetta is the one that never gets skipped, because the vinegar cuts straight through the BBQ sauce. Then grilled corn with bacon and cheddar while the grill is still hot, and my best potato salad with bacon made a few hours ahead so it is properly cold. Chicken, corn, potatoes, slaw. That is the plate.

  • ¼ cup (60 ml) homemade BBQ sauce
  • 1 tsp (5 ml) chili powder
  • ½ tsp (2.5 ml) smoked paprika
  • 2 garlic cloves, minced

  • In a Mason jar, combine olive oil, BBQ sauce, chili powder, smoked paprika, garlic, salt and pepper. Close the lid and shake vigorously for 30 seconds until the marinade is homogeneous.
  • Pour the marinade over the protein of your choice in a dish or resealable bag. Reserve about 2 tbsp (30 ml) of marinade separately in a small container for brushing during cooking. Let marinate in the refrigerator for a minimum of 2 to 3 hours, ideally overnight for maximum flavor.

The best ones start from something that already tastes like barbecue. This recipe uses smoky BBQ sauce as the base rather than the usual oil and vinegar, which is why it needs so few ingredients: the sauce brings smoke, sweetness and acid in one shot. I use my homemade classic smoky BBQ sauce. A good store-bought sauce works too, but skip the very sweet ones. Sugar burns before the chicken is cooked through and you end up with black outside and raw inside.

Minimum two to three hours in the refrigerator. Ideal is overnight, somewhere between eight and twelve hours, and that is where the difference actually shows up on thick breasts. Beyond twenty-four hours you gain nothing. Shrimp and tofu are the exception in the other direction: thirty minutes maximum, or the texture starts going soft on you.

Not the portion that held raw chicken. It does not go back on the meat and it does not get turned into a sauce. That is why this recipe has you reserve 2 to 3 tablespoons in a separate container before the chicken goes in. That clean portion is your basting marinade and it is safe. Everything else gets poured out with the bag.
