🔥 The BBQ chicken that changed my weeknight dinners
The day I put my chicken thighs in the air fryer with BBQ sauce, I knew I had found my ultimate weeknight dinner. No oven heating up the kitchen, no grill to fire up, and yet the result is absolutely mind-blowing. Juicy chicken, caramelized on the surface, with that shiny layer of BBQ sauce that makes the whole table drool before they even sit down. My kids ask for it every time, and honestly, it’s the kind of recipe that takes zero effort for a result that impresses.
🍗 The secret technique: fold and brush
The real trick that makes all the difference with my BBQ chicken thighs in the air fryer is folding each piece in half over itself before placing it in the basket. It creates a nice compact shape that keeps all the juices inside and cooks evenly. The other secret is the temperature: 375°F instead of 400°F. BBQ sauce is sweet, and if you go too high, it will burn instead of caramelizing. By keeping a gentler temperature and brushing with fresh sauce at mid-cooking, you get golden, shiny chicken without any trace of charring.
🎉 Simple, fast and always spectacular
Whether it’s for a rushed Tuesday night or dinner with friends on Saturday, this BBQ chicken thighs in the air fryer recipe does the job every time. Boneless, skinless chicken thighs are perfect with a wet sauce like BBQ. The skin wouldn’t crisp up anyway with a sweet sauce, so we skip it and enjoy chicken that absorbs all the flavor of the marinade. Serve this with rice, a fresh salad or my salade de maïs grillé and you have a complete meal that goes ‘wow’ in less than 30 minutes of cooking.

🌡️ 375°F (190°C), no higher
BBQ sauce is sweet, and sugars burn quickly at high temperature. By cooking at 375°F instead of 400°F, you get golden and shiny caramelization without any charring. This is what makes the difference between appetizing BBQ chicken and blackened chicken that tastes bitter.
🍗 Fold each chicken thigh in half
Instead of laying the chicken thighs flat in the basket, fold them in half over themselves, folded part facing down. This creates a nice compact shape, keeps all the juices trapped inside and cooks much more evenly. The result is juicy chicken that has structure on the plate.
🫙 Divide your BBQ sauce into three portions
This is the most important trick of this recipe: one portion for the marinade, a second fresh one for brushing at mid-cooking, and a third fresh one for serving at the table. Never reuse raw marinade for brushing. Always keep clean sauce aside. This gives incredible layers of flavor.
❌ Don’t flip the chicken
Leave your chicken thighs alone during cooking. No need to flip them. The air fryer’s air circulation does the job. The only time you open the basket is at mid-cooking to brush with fresh BBQ sauce, and that’s it. The less you touch the chicken, the juicier it stays.
🔥 Don’t overcrowd the basket
If your chicken thighs are large or if you’re doubling the recipe, cook them in two batches. When pieces are crowded against each other, air doesn’t circulate and the chicken steams instead of caramelizing. The space between pieces is what gives the golden and crispy side.
🥩 Why skinless with a wet sauce
With a dry marinade, skin crisps up and it’s delicious. But with a wet and sweet BBQ sauce, skin will never crisp. It will become soft and rubbery. By using skinless chicken thighs, the sauce penetrates directly into the meat and every bite is full of flavor.

Preparation
- In a large bowl, mix olive oil, BBQ sauce, chili powder, smoked paprika and garlic. Season with salt and pepper to taste.
- Add chicken thighs and coat well with marinade. Cover and let marinate in the refrigerator for at least 30 minutes, ideally a few hours.
- Preheat air fryer to 375°F (190°C). Fold the chicken thighs in half over themselves and place in the basket in a single layer, without overlapping.
- Cook for 18 to 22 minutes, without flipping. Brush with fresh BBQ sauce at mid-cooking and continue cooking until chicken is well browned and a thermometer inserted in the center reads 165°F (74°C).
- Remove from basket, brush with one last coat of fresh BBQ sauce and let rest 2 to 3 minutes before serving.
BBQ sauce contains sugar (maple, brown sugar, molasses or ketchup depending on the recipe), and sugars burn quickly at high temperature. At 400°F, your sauce risks blackening and becoming bitter before the chicken is cooked through. At 375°F (190°C), the sauce caramelizes slowly and forms a shiny and golden layer without any trace of charring. It’s this gentler temperature that gives the glossy and appetizing finish we want on successful BBQ chicken.
Boneless chicken thighs have an irregular shape that makes some parts thin and others thick. Which results in uneven cooking. By folding them in half, folded part facing down, you create a compact piece of uniform thickness that cooks everywhere at the same time. Plus, the fold traps juices inside, and the top forms a nice domed surface that caramelizes spectacularly under the air circulation.
You can marinate the chicken thighs up to 24 hours in advance in the refrigerator. The more time the marinade has to work, the more flavorful the chicken will be. However, air fryer cooking should be done when serving to keep the golden and caramelized side. Cooked chicken keeps 3 to 4 days in the fridge and reheats very well in the air fryer at 350°F (175°C) for 5 to 6 minutes. Think about reserving fresh BBQ sauce for brushing when reheating.
The two classic mistakes: overcooking the chicken and not brushing it during cooking. Overcooked chicken becomes dry and rubbery, especially skinless chicken thighs that don’t have the protection of skin fat. Use a meat thermometer and remove chicken as soon as the center reaches 165°F (74°C). The other mistake is skipping the mid-cooking brushing step. That’s what creates the shiny caramelized layer that makes all the visual and taste difference.
My BBQ chicken thighs in the air fryer are a versatile main dish that pairs with a thousand ways. For a summer meal, serve them with my grilled corn salad which makes an absolutely perfect smoky-sweet pairing, or with my air fryer potato wedges to keep the air fryer theme from start to finish. A bowl of basmati rice absorbs the excess BBQ sauce wonderfully, and don’t hesitate to use my homemade bbq sauce extra at the table. It’s what takes this recipe from excellent to legendary.
