Pimped Waldorf salad

I am starting to be excited to see spring arrive ! This pimped Waldorf salad is my way to bring a bit of sun in this never ending winter of ours. Come on guys, hang in there !


  • 540 ml chickpeas, ringed and well drained
  • 4 big celery sticks, cut in half lengthwise then finely sliced
  • 3 big McIntosh apples peeled, cored and diced
  • 2 shallots, finely sliced
  • 1/2 fennel bulb, cut in half then finely sliced
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1 cup green grapes cut in half
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, coarsely chopped
  • Zest from 1 lemon
  • A big handful fresh parsley, chopped
  • 6 tablespoons light mayonnaise
  • 2 tablespoons apple cider (or real apple juice)
  • 1/2 teaspoon paprika
  • Salt and ground pepper


  • In a very big salad bowl, add all the ingredients then generously season with salt and pepper. Toss like a ninja and place in the fridge for 30 minutes. Serve with a bread baguette and a nice brie cheese !

Ah the freshness of lemon, freshly cut grass, and a honeyed little side. A bit of fat in the mouth, sensation of whipped butter, with a retro floral that gives us a nice minerality. Everything to celebrate spring, a salad and a fresh wine !
