This Cornish Chicken with lavender, thyme and lemon is another recipe created for Exceldor. I really like the taste that lavender brings to meat. It is close to lemon and thyme and that’s why the combination works so well!

  • Preheat oven to 375 °F.
  • Place the chicken on a large baking sheet lined with parchment paper. Insert the remaining half lemon into the chicken cavity. Season the chicken with salt and pepper (everywhere, everywhere) then sprinkle with dried thyme to taste.

Our sommeliers suggest
Burg Ravensburg Pinot Noir 2022
Baden, Germany
Burg Ravensburg Pinot Noir is a fruity, generous red from Germany, and pinot noir is known for staying light on the palate. That means it will not run over the delicate lavender, the thyme and the lemon on the hen, and its red berry fruit softens the citrus without putting it out. A Sunday meal with friends, the whole table smelling of herbs. See the product
Triple d’Abeille Chardonnay, Bockale, 10%
Lavender, thyme, lemon: the bird comes out of the oven fragrant without being heavy. The honey tripel aged in Chardonnay barrels follows those aromas closely, apricot, peach and wild pepper, and its roundness coats the roasted skin. The honey behind it bridges to the lavender. See the product
