Ingredients
- 1/2 cup honey
- 1/4 cup soy sauce
- 1/4 cup olive oil
- 4 garlic cloves, finely chopped
- 1/4 cup of mead (or white wine)
- 2 teaspoons toasted sesame seeds
- 8 thick pork chops, about 1.2kg
- Salt and freshly ground pepper
Preparation
- In a bowl, add all the ingredients for the marinade (except the pork) then season with salt and pepper generously. Mix well.
- Place the pork in a large airtight container and pour 3/4 of the marinade over it. Close lid, shake like crazy and reserve in the fridge for 4 hours. Shake each hour. Place the marinade in the fridge too.
- Preheat the BBQ to high temperature and reduce to medium intensity. Oil the grills.
- Place chops on fire and cook for 1 minute. Give a 45-degree rotation and continue cooking another minute. Flip the meat and repeat. Cook 1 minute, rotate 45 degrees and cook 1 minute. Baste the meat constantly with the fresh marinade ! Depending on the thickness, the meat should be slightly pink. Continue at indirect cooking if necessary. Place on a plate, cover with foil and let stand 5 minutes before serving. *** For this type of recipe, I suggest to always have a water bottle to extinguish the fire under the grills !!! ***

Cave de Roquebrun Les Fiefs d'Aupenac 2015
I invite you to discover the Languedoc-Roussillon for these small pork chops. A charming nose, where one oscillates between honey, exotic fruits and toasted almonds. The mouth is generous, complex with a beautiful length. The wine has sap, dry ... in short it is the wingman all designated for these pork chops !

With the aromas of roasted cereal, maple and caramel, this beer will resonate with the ingredients rich in umami (soya, honey, sesame). The beer offers a nice roundness brought by the addition of honey, it will recall the caramelized notes of honey and mead of the marinade. His roasted notes will be pleasing with the sesame seeds of the recipe.
