🔴 Marinating is Essential
Don’t skip the marinade! Even one hour makes a huge difference. The honey caramelizes on the grill, balsamic vinegar adds punch, and spices bring the chicken to life.
🔴 Divide the Marinade in Two
Always keep a portion separate for brushing during cooking. This prevents cross-contamination and boosts flavor with every turn.
🔴 Bring Your Chicken to Room Temperature
Taking the chicken breasts out of the fridge 15 minutes before grilling ensures more even cooking and prevents cold spots in the center.
🔴 Two-Step Cooking for Perfect Bacon
Bake your bacon at 400°F, then drain well. Result: crispy yet flexible bacon that won’t crumble and fall apart with every bite.
🔴 Raclette Cheese for Guaranteed Melt
“Le Boucan” cheese is perfect. Place it on the chicken while cooking indirectly so it melts gently without dripping everywhere.
🔴 No Grill? A Grill Pan Saves the Day
Cook chicken breasts on a ridged pan with a lid to lock in moisture and melt the cheese perfectly. Almost as good, we promise.
🔴 Spicy Mayo = The Killer Touch
Make it in advance, keep it chilled, and don’t be shy—spread it generously. It ties everything together and amps up the flavors.
🔴 Strategic Assembly = A Burger That Holds Together
Start with lettuce at the bottom, followed by chicken, bacon, and tomato. This prevents sauce from soaking into the bun, ensuring your burger stays intact till the last bite.

Preparation
- Put the chicken breasts in an airtight dish and set aside.
- In a bowl, put the ingredients for the marinade, season with salt and pepper and mix. Pour half of the marinade over the chicken, close the dish and mix well. Reserve in the fridge for 1 hour along with the fresh marinade.
- Preheat the oven to 400°F. Cover a baking sheet with parchment paper and put the bacon slices. Bake for 20 to 25 minutes or until the bacon is cooked semi-crisp. Lay the slices on several sheets of paper towel and press down to soak up the fat. Set aside.
- In a bowl, put the ingredients for the mayonnaise, season with salt and pepper and mix. Reserve in the fridge.
- Preheat the barbecue to maximum power and reduce to medium power. Oil the grates. Place the breasts on the heat and sear for 3 to 4 minutes per side. Brush with the fresh marinade constantly. Put the cheese on the chicken breasts and continue cooking over indirect heat until the breasts are cooked (165°F) and the cheese is melted.
- Assemble your burger! Spread a nice amount of sauce in the buns and place a few lettuce leaves on the bottom bun. Top with the chicken breast, a few slices of bacon and a slice of tomato. Put the bread on top and prick with a sandwich skewer!
