This recipe from my Tome 2 is my personal creation that combines so many things I adore: kale, pearl barley, golden grilled halloumi and bright yellow beets. It’s exactly the kind of healthy gourmet bowl salad that transforms an ordinary lunch into a gastronomic feast, saves an impromptu Saturday night with friends, and makes you forget all those boring cafeteria salads. Seriously, it’s insanely good. I had tasted something similar at a restaurant and found the idea so incredible that I absolutely had to create my own version for the site.
🔥 My signature trick: oven-grilled barley (broil)
Before even cooking the barley in chicken broth, I dry-roast it on a sheet pan under the oven broiler for 5 to 6 minutes. This broil step releases toasted hazelnut flavors that regular boiled barley NEVER has. It’s this technical detail that transforms a decent healthy salad into a dish that absolutely rocks. Combined with yellow beets roasted in the oven (more visually appealing and less staining than red ones), halloumi in large cubes pan-fried golden, and the white balsamic and lemon vinaigrette, you get a salad with 3 different levels of caramelization. It’s sophisticated without being complicated.

🌾 Oven-grilled barley (broil), my signature trick
This is what transforms this salad into something special. Before cooking the barley in broth, spread it on a parchment-lined sheet pan and broil it for 5 to 6 minutes under the oven broiler, stirring regularly. This dry step releases toasted hazelnut flavors that regular boiled barley NEVER has. It’s the idea I tasted at a restaurant and absolutely had to recreate.
💧 Rinse the barley BEFORE grilling it
Rinse the barley in cold water first to remove surface starch, then drain it WELL (spin in a fine strainer, press with a spoon to extract excess water). If the barley is still wet on the sheet pan, it steams instead of grilling. You want it as dry as possible before putting it under the broil.
🟡 YELLOW beets, never red (unless you have no choice)
Yellow beets have 2 major advantages over red ones: they have a slightly sweeter and lighter profile, and they DON’T stain the rest of the salad bright pink like red ones would. Visually, it’s clearly superior. If you only have red ones on hand, go for it, but know that your salad will turn bright pink.
🍵 Chicken broth > water, always
Cooking barley in chicken broth (or vegetable for veggie) instead of water adds layers of umami to the base. It’s subtle but makes all the difference in the final result. Invest in a good broth. It’s the detail that elevates the recipe.
🧀 Halloumi at room temperature, well patted
Take the halloumi out of the fridge 30 minutes before cooking to bring to room temperature. Cold it comes out rubbery, room temp it browns perfectly. Cut into LARGE dice and pat each piece thoroughly with paper towels before putting in the pan. Wet halloumi = no golden crust.
⏱️ Multitask to save time
While the beets are cooking in the oven (45 min, 1h), you can cook the barley in the broth in parallel (45 min). You can also grill the halloumi while they’re cooling. The recipe takes 2 hours total but by multitasking, you can make it actively for only 30 min.
🥬 Don’t replace the kale
You can replace kale with baby spinach or arugula, but the texture won’t be the same. Kale brings a robust chew that stands up to the vinaigrette and warm ingredients. If you substitute, add the leaves just before serving so they don’t become limp.
❌ Mistake #1: overcooked barley that becomes mushy
Watch the barley cooking in the broth. Al dente, no more. Overcooked, barley becomes mushy and loses all its structure. Taste around 40 minutes and stop as soon as the grain is tender but retains slight resistance to the tooth.
🥕 Beets well cooked to the center
Raw beets in the center is the other classic mistake. Poke with a fork to the center of the bulb to check. If it goes through easily, it’s cooked. Otherwise, extend by 10-15 minutes. Small beets cook in 45 min, large ones can take 1h15.
🥗 Prepare ahead for entertaining
You can prepare each component separately 2-3 days in advance (cooked barley, roasted beets, grilled halloumi, vinaigrette) and keep in airtight containers in the fridge. When serving, gently reheat the barley and halloumi in the pan, assemble everything and dress with vinaigrette. Ideal recipe for entertaining without locking yourself in the kitchen.

Barley salad
- 2 cups (500 ml) pearl barley
- 4 or 5 small yellow beets
- 4 cups (1 liter) chicken broth (or vegetable broth for veggie version)
- 11 oz (320 g) halloumi cheese, cut into large dice
- Extra virgin olive oil
- 1½ cups (375 ml) finely chopped kale
- ½ cup (125 ml) roasted almonds, coarsely chopped
- 2 green onions, thinly sliced
- 1 bunch fresh basil, finely chopped
- Salt and freshly ground black pepper
Vinaigrette
- 3 tbsp (45 ml) white balsamic vinegar
- Juice of ½ lemon
- ¼ cup (60 ml) good quality extra virgin olive oil
- Salt and freshly ground black pepper

Preparation
- Turn on the oven broiler. Line a large baking sheet with parchment paper.
- Put the barley in a strainer and rinse thoroughly with cold water. Drain very well and transfer to the baking sheet, spreading it in a single layer.
- Cook under the broiler for 5 to 6 minutes, stirring regularly, until the barley is well grilled and releases a toasted hazelnut aroma. Remove from oven and set aside.
- Preheat oven to 450°F (230°C). Wash beets under cold water. Wrap individually in aluminum foil without drying them and place directly on the oven rack. Cook 45 minutes to 1 hour or until a fork penetrates easily to the center. Well cooked, not raw.
- While the beets are cooking, put the grilled barley in a saucepan and pour enough chicken broth to cover by 2 inches (5 cm) of liquid. Cover, bring to a boil, then reduce to low heat. Simmer about 45 minutes or until barley is al dente. If needed, add a little broth during cooking.
- Drain the barley in a strainer, rinse under cold water and drain well again. Transfer to a large salad bowl and set aside.
- Unwrap the cooked beets and rinse under cold water while rubbing the skin to remove it easily. Cut into small wedges and rinse again under cold water to cool them. Add to the salad bowl.
- Remove halloumi from fridge 30 minutes before cooking to bring to room temperature. Cut into large dice, pat thoroughly dry with paper towels.
- In a large non-stick pan heated over medium-high heat, add the halloumi dice and drizzle with a thin stream of olive oil. Cook 2 to 3 minutes per side or until cheese is well golden on all sides. Add to the salad bowl.
- Add the kale, three-quarters of the almonds, green onions and basil to the salad bowl. Mix gently.
- Prepare the vinaigrette: in a small bowl, whisk the white balsamic vinegar, lemon juice and olive oil. Season with salt and pepper.
- Pour the vinaigrette over the salad and mix. Adjust seasoning to taste. Serve warm, garnished with the remaining chopped almonds.

Absolutely. Replace the chicken broth with vegetable broth. The recipe remains excellent. Halloumi is essential to this recipe, so don’t replace it (or if you really don’t have any, firm grilled tofu or grilled chickpeas can work in a pinch but it will be a different recipe).
