In collaboration with the Mouvement J’aime les fruits et légumes, I was challenged to create an amazing recipe on the BBQ with frozen fruits! This blueberry and bacon spread is just legendary. Believe me, it is delicious and impossible to miss!

Preparation
- Place a large cast-iron skillet on the barbecue grates and preheat to medium heat. Add the bacon and cook for about 10 minutes or until the bacon is crispy. Using a slotted spoon, remove the bacon and set aside in a bowl. Discard 3/4 of the bacon fat from the skillet.
- Return the pan to the heat, add the onion, a thin drizzle of olive oil and mix. Cook 3 to 4 minutes, stirring.
- Add the bacon, blueberries, maple syrup, season with salt and pepper and mix. Cook for about 10 minutes or until the liquid has mostly evaporated and the mixture is thick. Remove from heat and let cool for 5 minutes.
- Oil the croutons and toast to taste on the grills.
- Spread about 1 tablespoon of the mixture per croutons and garnish with a few shavings of cheese and chives. Devour immediately!
Our sommeliers suggest
Sortilège Bleuets Sauvages
Quebec, Canada
The Sortilège Bleuets Sauvages is a Quebec liqueur that picks up the blueberries in the compote and adds a little more sweetness on top. The salty bacon and the aged cheese keep it from going too sugary, so you get that sweet-and-salty thing everyone loves. Pour a tiny glass next to the toasts for happy hour, and the compote vanishes fast.

Un Gâteau, 10.2%
Lagabière
Blueberry and bacon: sweet and smoky stuck together. A pastry stout with chocolate and raspberry follows both: its cocoa leans toward the bacon, its red berries toward the compote. It is round and sweet, so one small glass is enough to finish breakfast.
