Bacon blueberry spread

  • 250 g bacon, diced
  • 1/2 small Vidalia sweet onion
  • Olive oil
  • 300 g frozen blueberries
  • 1/4 cup maple syrup
  • Baguette bread cut into croutons
  • Old Amsterdam cheese shavings for serving
  • Finely chopped chives for serving
  • Salt and pepper from the mill

Preparation

  • Place a large cast-iron skillet on the barbecue grates and preheat to medium heat. Add the bacon and cook for about 10 minutes or until the bacon is crispy. Using a slotted spoon, remove the bacon and set aside in a bowl. Discard 3/4 of the bacon fat from the skillet.
  • Return the pan to the heat, add the onion, a thin drizzle of olive oil and mix. Cook 3 to 4 minutes, stirring.
  • Add the bacon, blueberries, maple syrup, season with salt and pepper and mix. Cook for about 10 minutes or until the liquid has mostly evaporated and the mixture is thick. Remove from heat and let cool for 5 minutes.
  • Oil the croutons and toast to taste on the grills.
  • Spread about 1 tablespoon of the mixture per croutons and garnish with a few shavings of cheese and chives. Devour immediately!
