Croque-monsieur with ham, brie cheese and apples

I love croque-monsieur. It’s easy and quick to do, but most importantly, the possibilities are endless! Here, I decided to combine ham, brie cheese and apples with the peppery side of the arugula. So good ! Perfect for a brunch or a summer snack.


  • 6 slices of Belgian multigrain bread
  • 6 teaspoons old mustard
  • 6 slices (150g) black forest ham
  • 6 slices mozzarella cheese
  • About 1 cup fresh rocket
  • 1 large Cortland apple, cut in half and sliced
  • 200g double cream brie cheese, sliced
  • Ground pepper


  • Preheat oven to GRILL. Place slices of bread on a baking sheet lined with parchment paper. Grill lightly on both sides and remove from oven. Set aside.
  • Preheat the oven to 350°F.
  • Spread about 1 teaspoon of old mustard on one side of the loaves then add a slice of ham and mozzarella cheese. Continue with a small handful of fresh arugula, apple slices and brie cheese. Pepper to taste and place in the oven.
  • Bake for about 15 minutes, until cheese is melted. Serve immediately.

Yalumba viognier, it's a flower nose, a retro honey, an almost mellow mouth, no residual sugar ... and especially a real bargain! This wine has gone from $ 16.95 to $ 13.95 in the last few months at the SAQ. Chuuute, do not talk too much, sometimes it's a mistake ... but run to buy more!


This generously hoppy season features fruity flavours of mangos, apricots and lemon that will support the apples of the croque-monsieur. You will also find notes of pepper, from the yeast season, which will bring a nice complement to cheeses. Offering a great effervescence, the bubbles will break the accumulated fat on your taste buds to better let the aromas express themselves.
