Preparation :10 min Cooking :15 min
Difficulty :medium
Servings :1 medium pizza

Nothing beats this cherry tomato pizza with parmesan and fresh origano. It’s so fresh that it makes us wish that this summer would never end! Serve that with your favorite wine and you are in business…

  • 1 fresh pizza dough
  • Butter or margarine
  • Extra-virgin olive oil
  • 4 big garlic cloves, finely chopped
  • Italian spices
  • 2 packs (about 500g total) colorful cherry tomatoes, cut in half
  • 1 1/2 cup fresh parmesan, grated
  • Ground pepper
  • Handful fresh origano

  • Preheat the oven at 500°F.
  • Roll dough and put on a cooking pan greased with butter or margarine. You can also use a pizza stone or a screen to cook it.
  • Add a drizzle of olive oil on the pizza ( about 2 tablespoons ) and spread evenly, even on the side crust!
  • Spread the garlic then sprinkle the dough with Italian spices to taste.
  • Fill the pizza with cherry tomatoes then cover in parmesan cheese! Pepper to taste then throw in the oven and cook for about 10-15 minutes or until the crust is nice and golden. You can also end the cooking by cranking the oven at broil, for a couple of minutes, to give an extra golden color to the cheese, if necessary!
  • Remove the pizza from the oven then garnish with the fresh origano before serving!

Our wine stewards suggest

+- 15$ Villa Sandi Cabernet Franc

Soft, on the fruity side and coupled by a nice acidity, this cabernet franc from north Italy will be perfect with the sweet/acid flavors of the cherry tomatoes. Serve it slightly chilled!

+- 30$ Evening Land Oregon Pinot Noir Willamette Valley 2012

An amazing pinot noir from Oregon that combines typical elegance from this wine variety. It has a flavorful and mature character that brings hints of warm raspberries and spices.

Session IPA de Lesseps, Pit Caribou

This Session IPA beer, full of aromas of exotic and citrus fruits, will emphasize the taste of the cherry tomatoes of this pizza to make a burst of flavor. Beer and pizza for the win!
