I love croque-monsieur. It’s easy and quick to do, but most importantly, the possibilities are endless! Here, I decided to combine ham, brie cheese and apples with the peppery side of the arugula. So good ! Perfect for a brunch or a summer snack.

            Ingredients
- 6 slices of Belgian multigrain bread
 - 6 teaspoons old mustard
 - 6 slices (150g) black forest ham
 - 6 slices mozzarella cheese
 - About 1 cup fresh rocket
 - 1 large Cortland apple, cut in half and sliced
 - 200g double cream brie cheese, sliced
 - Ground pepper

Preparation
- Preheat oven to GRILL. Place slices of bread on a baking sheet lined with parchment paper. Grill lightly on both sides and remove from oven. Set aside.
 - Preheat the oven to 350°F.
 - Spread about 1 teaspoon of old mustard on one side of the loaves then add a slice of ham and mozzarella cheese. Continue with a small handful of fresh arugula, apple slices and brie cheese. Pepper to taste and place in the oven.
 - Bake for about 15 minutes, until cheese is melted. Serve immediately.
