Stimpson’s surf clam ceviche

I definitely fell in love with the Stimpson’s surf clam! This clam fished in Canada has a red and white flesh popular in Japan. Its texture is reminiscent of the royal clam and its taste is similar to that of lobster.

This mollusk from here deserves attention and we should earn to appreciate it as much as the Japanese do. Often called the Quebec Clam, it can be cooked in many ways! Serve it in ceviche and you will be pleasantly surprised!
