  • 550g ultra-fresh skinless salmon, finely chopped
  • 120g good-quality smoked salmon, finely chopped
  • 1 tablespoon green onion, finely chopped
  • 1 tbsp. red onion, finely chopped
  • 1 tbsp. fresh chives, finely chopped
  • 1 tbsp. capers, finely chopped
  • 2 tbsp. good quality extra-virgin olive oil
  • 1 ½ tsp. Dijon mustard
  • 1 tsp. orange zest
  • 2 ½ tbsp. fennel bulb, cut into mini cubes
  • 2 tbsp. peeled green apple, cut into mini cubes
  • Salt and freshly ground pepper

  • Pour all the ingredients except the fennel and apple into a large bowl and season with salt and pepper. Mix well and refrigerate for 30 minutes.
  • Remove from the fridge, add the fennel and apple and mix well. Taste and adjust seasoning if necessary. Serve with deluxe croutons!
