Quick pickled red onions

Whether you’re serving them on hamburgers, on a salad or simply enjoying them right out of the jar, these quick pickled red onions are sure to satisfy. Experiment with different spices! They’ll keep for about 2-3 weeks in the fridge.

Pickled onions
- 1/2 cup water
- 1/4 cup white vinegar
- 1/4 cup cider vinegar
- 1 tbsp. honey
- 1 tsp. peppercorns
- 1/2 tsp. salt
- 1 red onion, thinly sliced
Preparation
- In a small saucepan, with the exception of the onion, combine all ingredients. Bring to a boil and remove from heat.
- In a Mason jar, compact the red onion and pour the liquid over the top. Close the jar, shake well and let stand for 20 minutes. It’s that easy!
- Set aside in the fridge and serve with salads, burgers and anywhere else that’s socially acceptable.
