Ingredients

  • 800 g pork tenderloin, cut into large cubes
  • 2 tablespoons smoked paprika
  • 2 tablespoons Italian spices
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1/2 tablespoon chili powder
  • 1/2 tablespoon dried thyme
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon dried parsley
  • Salt and pepper from the mill

Ingredients for the breading

  • 1 1/2 cups panko breadcrumbs
  • 1 1/2 cup breadcrumbs
  • 2 tablespoons Italian spices
  • 6 eggs
  • Salt and pepper from the mill

Ingredients for the sauce

  • 6 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • Salt and pepper from the mill

Preparation

  • Place the pork in a large bowl and set aside.
  • In another large bowl, put the spices, season with salt and pepper and mix. Pour half the spices over the pork and toss. Add the rest of the spices and mix well to coat. Set aside.
  • In a large bowl, put the panko, breadcrumbs and Italian spices, season with salt and pepper and mix well.
  • In another large bowl, put the eggs and beat well.
  • In a deep fryer or medium saucepan with 2”of vegetable oil, heat oil to 350° F.
  • Preheat the oven to 200° F.
  • A small amount at a time, with your left hand, dip the pieces of pork in the egg, drain and place in the breadcrumbs. With your right hand, coat the pork in breadcrumbs.
  • Cook a small amount at a time in the oil, 4 to 5 minutes, or until the pork is cooked pink and the breading are golden brown and crispy. Adjust the temperature of the oil if the breading cook too quickly versus pork. Remove the meat from the oil and place on a paper towel for 2 minutes. Place on a baking dish with a wire rack and reserve in the oven. Continue with the rest of the pork.
  • For the sauce, simply put the ingredients in a bowl and mix.
