☀️ The kind of breakfast that makes you slow down
This is not a sad, rushed toast eaten standing up. This morning croque-monsieur is the kind of breakfast that makes you sit down, take a breath, and smile at the first bite. 🔥 Crunchy nut bread, a sharp swipe of mustard, smoky Black Forest ham, melted Swiss cheese, and a hot egg gently breaking into everything. This is comfort done right.
Simple, fast, but intentional. Perfect for a laid-back brunch, a weekend morning, or even a cozy lunch when you want something satisfying without overcomplicating things. Every ingredient has a role, and together they deliver a warm, generous sandwich that tastes like the weekend, even on a Tuesday.

🔥 Mastering the broil
Broil works fast and hard. Stay close to the oven to melt the cheese without burning the bread, especially with dense nut bread.
🍳 The egg makes all the difference
A runny fried egg adds maximum richness, but creamy scrambled or poached eggs work just as well if you prefer a cleaner bite.
🧀 Choose the right cheese
Swiss cheese melts evenly and stays stretchy. Avoid very dry cheeses that do not melt properly under the broiler.
🥬 Spinach, just enough
A small handful is plenty. Too much spinach releases water and softens the bread.
🧊 Storage and prep ahead
This croque is best freshly assembled. Prep the components ahead if needed, but assemble and broil at the last minute.
Ingredients
- 2 slices nut bread about 1.5 cm (½ in) thick
- Whole grain mustard or Dijon mustard
- 4 slices Black Forest ham
- Baby spinach
- 4 slices Swiss cheese
- 2 eggs cooked to your liking (fried, scrambled, or poached)
- Fresh chives chopped optional

Preparation
- Preheat the oven to broil.
- Place the bread slices on a baking sheet and lightly toast one side. Remove from the oven, keeping the broiler on.
- Spread mustard on the toasted side of the bread. Add 2 slices of ham, a handful of spinach, and 2 slices of Swiss cheese on each piece.
- Return to the oven for a few minutes, just until the cheese is melted.
- Remove from the oven, top each croque with an egg, and garnish with chives if desired.
Nut bread or thick country bread holds up better under the broiler and adds texture.
High-quality white ham or prosciutto works well, as long as it is not too wet.
Absolutely!!! Assemble the croques ahead and broil them at the last minute before serving.
