Morning Croque-Monsieur

Ingredients

  • 2 slices nut bread about 1.5 cm (½ in) thick
  • Whole grain mustard or Dijon mustard
  • 4 slices Black Forest ham
  • Baby spinach
  • 4 slices Swiss cheese
  • 2 eggs cooked to your liking (fried, scrambled, or poached)
  • Fresh chives chopped optional

Preparation

  • Preheat the oven to broil.
  • Place the bread slices on a baking sheet and lightly toast one side. Remove from the oven, keeping the broiler on.
  • Spread mustard on the toasted side of the bread. Add 2 slices of ham, a handful of spinach, and 2 slices of Swiss cheese on each piece.
  • Return to the oven for a few minutes, just until the cheese is melted.
  • Remove from the oven, top each croque with an egg, and garnish with chives if desired.
