- 2 slices nut bread about 1.5 cm (½ in) thick
- Whole grain mustard or Dijon mustard
- 4 slices Black Forest ham
- Baby spinach
- 4 slices Swiss cheese
- 2 eggs cooked to your liking (fried, scrambled, or poached)
- Fresh chives chopped optional

Preparation
- Preheat the oven to broil.
- Place the bread slices on a baking sheet and lightly toast one side. Remove from the oven, keeping the broiler on.
- Spread mustard on the toasted side of the bread. Add 2 slices of ham, a handful of spinach, and 2 slices of Swiss cheese on each piece.
- Return to the oven for a few minutes, just until the cheese is melted.
- Remove from the oven, top each croque with an egg, and garnish with chives if desired.
