Legendary blueberry parfait

I had the pleasure of being approached by Mubbles, a company that makes molecular food products. They asked me to create a decadent recipe using their fruit pearls. I decided to create my version of one of my favorite desserts: a legendary blueberry parfait! Do not worry, their products are available in most of supermarkets!

Our sommeliers suggest
Mionetto Treviso Prosecco
Veneto, Italy
Mionetto Treviso Prosecco is a fruity, lively sparkling wine from Veneto, made from glera, and it brings what this parfait is missing: a little fizz to lighten things up. The bubbles cut through the mascarpone and the vanilla ice milk, while its fruit finds the blueberries and the lemon zest. Ideal for ending a summer dinner on the patio! See the product
Le Bleu des Bleuets, 5%
La Chouape
A white beer brewed with real blueberries next to a blueberry parfait, the pairing makes itself. The dune pepper adds a resinous edge that keeps the dessert from falling flat. Neither sour nor sweet, it leaves the creaminess of the parfait to take up the space. See the product
