Squares, dates, rum … Three of my favorite ingredients! This dessert is just perfect … Thanks to my mother-in-law for the inspiration!

Ingredients for the filling
- 1 cup cold water
- 1/2 cup brown sugar
- 1 tablespoon dark rum
- 2 1/2 cups chopped dates
- 1 tablespoon cornstarch
Ingredients for the dough
- 1 1/2 cups all-purpose flour
- 1 cup brown sugar
- 1 3/4 cup fast-cooking oatmeal (oatmeal)
- 1/4 teaspoon baking soda
- 1 pinch of salt
- 1 cup butter, soft
Preparation
- Preheat the oven to 350°F.
- In a small saucepan over medium heat, add water, brown sugar and rum. Heat gently for 2 to 3 minutes, stirring with a whisk, to dilute the sugar.
- Add dates and cornstarch then mix. Cook for 3 to 4 minutes, stirring regularly, until the dates begin to break and the mixture slightly thickens. Remove from heat and let cool completely, about 30 minutes.
- In a large bowl, add the flour and brown sugar then mix well with a whisk to break up the lumps. Add the oatmeal, baking soda and salt then mix well. Set aside.
- Using a hand or stand mixer, beat the butter for 15 to 30 seconds to make it creamy. While mixing, stir in the flour mixture and continue beating for 30 seconds to obtain a lumpy mixture. Scrape the sides of the bowl well.
- In a buttered mould about 8 “x 10”, pour a little over half of the dough mixture into the bottom and compact slightly with a spatula.
- Add the dates and distribute well.
- Pour the rest of the dough mixture and pack slightly again.
- Place in the oven and cook for 30 minutes. Crank to broil and bake for 2 minutes or until lightly browned. Let cool completely, about 3 hours, before cutting into squares!
