If you like burgers and crispy fried chicken, this recipe is for you! The breading is perfectly crisp and light … The bacon will bring a comforting salty side and the honey and Dijon mayonnaise will link the flavours and complete this perfect meal. I just ate one and just to look at the images, I’d eat another one right now!

Ingredients
- 2 chicken breasts (total 500g), cut in half lenghtwise
- 1 cup of milk
- The juice of 1/2 lemon
- About 4 cups vegetable oil
- 4 large luxury hamburger buns, grilled to taste
- 8 thick slices of bacon, cooked until crispy
- 4 slices mozzarella cheese
- Lettuce leaves
- Sliced tomatoes
Ingredients for the honey and Dijon mayonnaise
- 150 ml mayonnaise
- 1 1/2 tablespoons Dijon mustard
- 2 tablespoons honey
- 1/2 teaspoon dried parsley
- Salt and pepper from the mill
Ingredients for the breading
- 1 1/2 cups all-purpose flour
- 1 teaspoon Provence herbs
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper from the mill
Preparation
- In a large airtight container dish, add milk and lemon juice, season with salt and pepper then mix. Add the chicken breasts, close the dish and mix well. Reserve in the fridge for 1 hour.
- In a bowl, add the ingredients for the mayonnaise then season with salt and pepper. Mix and reserve in the fridge.
- In a large bowl, add the ingredients for the breading then generously season with salt and pepper. Mix.
- Remove the chicken from the milk and drain slightly (keep the milk mixture). Coat well in the breading mixture and shake to remove the excess. Reserve on a rack.
- Add 2 tablespoons of the milk mixture in the flour and mix to form lumps.
- Dip the chicken breasts a second time in the milk and then in the flour. The goal is to coat the chicken with lumps! Reserve on a grid.
- In a saucepan, pour enough oil to have 2″ in the bottom. Heat over high heat to 180°F.
- Cook the chicken for about 8 minutes, a small amount at a time, until it is golden brown and has reached an internal temperature of 165°F. Flip from time to time. Remove from oil, drain and place on paper towels for 2 minutes. Keep warm on a rack.
- Build your burgers ! Spread about 1 tablespoon mayonnaise on the top and bottom bread. Place some salad leaves on the bottom bread followed by a few slices of tomato and a crispy chicken breast. Add 2 slices of bacon, 1 slice of cheese and close with the top bread. Eat immediately and good luck to not get dirty!
