Ingredients
- 2 large yellow onions, sliced separated into rings
- 1/3 cup cornstarch
- 1 1/2 cup flour
- 2 tablespoons smoked paprika
- 2 teaspoons salt
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried parsley
- 473 ml English IPA beer by Kahnawake Livingstone Brewery (or other English IPA beer)
- Ground pepper
- Vegetable oil for cooking
Preparation
- In a large mixing bowl, put the rings and cover with water. Leave to soak for 20 minutes. Gently drain and place between two clean towels. Pat and leave to dry for 15 to 20 minutes.
- Preheat the oil to 375°F, either put 2” of vegetable oil in the bottom of a large saucepan or use your deep fryer. Preheat the oven to 200°F.
- In a bowl, put the onion rings and add the cornstarch. Toss gently to coat well. Set aside.
- In a large bowl, put the flour, smoked paprika, salt, baking powder, onion and garlic powder, parsley, season with pepper and mix.
- Pour in the beer and whisk to obtain a homogeneous texture. The batter should resemble thick pancake batter. Adjust with liquid or flour if necessary.
- On several sheets of absorbent paper, place a grid and set aside.
- Dip the onion rings in the batter and shake off excess. Carefully drop a few rings into the oil and cook for about 1 minute per side or until golden brown. Cook a small amount at a time and wait for the oil to come back to the right temperature before continuing to cook.
- Using a slotted spoon, remove the rings from the oil, place on the grill and let drain for 2 minutes. Place on a baking sheet and set aside in the oven while waiting. Eat alone or with your favourite sauce!
