Kickass nachos with homemade chili

Preparation :10 min Cooking :15 min
Difficulty :easy
Servings :2 to 4

Ahhhh nachos, not only they are delicious but it’s just not made to be precise! Go with your taste… You want more olives? Dude, please go ahead. Less chili? Absolutely. Want a vege version? Easy, just buy a vege chili at the market! This recipe is perfect as a main dish for two or will make a solid starter for four! Serve with your favorite IPA and along some salsa and sour cream.

Ingredients

  • 3/4 of a 300g Tostitos bag, restaurant style
  • About 8-10 teaspoons salsa
  • 1 cup beef and red beans chili ( or the one you want! ), hot
  • A good handful stuffed green olives
  • 2 cups mozzarella cheese, grated
  • 1 cup sharp cheddar, grated
  • 2 green onions, sliced
  • Sour cream and salsa

Preparation

  • Preheat the oven at 350°F.
  • In a big cooking tray, spread the Tostitos then throw the salsa everywhere.
  • Pour the chili but mostly in the center, in order to still have some crunchy Tostitos around!
  • Add the olives then cover with cheese like it’s your last day on earth. Mozzarella first then sharp cheddar after.
  • Cook in the oven for about 8-10 minutes then BROIL until cheese is nice and golden! Remove from oven and garnish with green onions. Serve with salsa and sour cream!

Our wine stewards suggest

+- 15$Domaine de l'Idylle Mondeuse 2013

I LOVE the mondeuse from Savoie! A variety that has peppery notes with a soft texture. The type of wine we drink while watching the game, with nachos!

+- 30$Domaine Marcel Lapierre Morgon 2014

Probably the most popular morgon out there, this wine gets sold out pretty fast! A wine with accents of peony, fresh strawberry and pepper that we can almost chug! I strongly suggest you put a second bottle in the fridge right now, you will drink the first one fast!

Le Brigantin, Le Naufrageur

Try this surprising pepper amber ale to give your nachos a little something. Despite the taste of butterscotch and pepper flesh, it won’t be too strong. Peppers help the body to produce endorphin, so you will feel better with each bite! It’s science!
